This Syrian recipe\, features a ground beef and rice filling seasoned generously with parsley\, mint\, onion and black pepper. Some cooks add a bit of finely ground coffee that adds complexity and depth. They are cooked in a tangy sauce of tomato\, lemon\, pomegranate and olive oil\, and served with fresh pita bread. \n[vegetarian] Yalanji (بالنجي)\nYalanji referes to a range of vegetarian dishes stuffed with a seasoned rice filling\, including this version of stuffed grape leaves flecked with green pepper. \nFalafel فلافل\nMost people in Toronto are familiar with falafel\, probably the most universally known Middle Eastern street food as a sandwich in a pita pocket with various toppings. SUMMARY:WORKSHOP: Syrian Home Cooking with Newcomer Kitchen
DESCRIPTION:Kibbeh Bel Sayniyeh\n \n \n \n \n \n Knafeh Nabulsia كنافة نابلسية\n \n \n \n \n \n Kaak bel Ajweh كعك بالعجوة\n \n \n\nAn immersive\, all-day cooking workshop on Victoria Day Holiday Monday! \nin 2016\, The Depanneur reached out to the Syrian newcomer community and has been delighting in the delicious results ever since. Our Newcomer Kitchen project has become something of a local sensation\, serving up 50 meals of traditional Syrian home cooking every week. \nIn that time\, many people have expressed interest in learning some of these fabulous recipes\, so for this holiday Monday\, The Dep and Newcomer Kitchen are teaming up to offer a full-day\, hands-on workshop delving into a some of our most popular Syrian dishes. The class will cover a number of delicious and traditional Syrian recipes\, and will include a light meze lunch and food to take home. \n— Morning —\nKibbeh is one of the most quintessentially Syrian dishes; I’ve been told that there are some 22 different kinds from Damascus alone! In this class we’ll be learning how to make 2 of them: \nKibbeh Lahmeh\nOne of the the most traditional and famous Syrian dishes. Bulgur wheat\, finely ground halal beef and spices are combined and formed into small football-shaped dumplings to be stuffed with a spiced mixture of ground beef and toasted pine nuts. They are then fried to give them a dark auburn and crisp exterior. \nKibbeh Bel Sayniyeh\nThis is a more unique vegetarian kibbeh\, made from two layers of bulgur and potato dough sandwiching a filling of chopped potato\, mushrooms\, nuts\, spices and pomegranate seeds. It is then artfully pre-sliced and decorated with blanched almonds before being baked. \nLUNCH\nYou’ll enjoy a light lunch of your still-warm kibbes along with a selection of Syrian mezzes\, salads and dips\, tea and sweets. \n— Afternoon —\nThe afternoon will focus on baking 2 very delicious Syrian desserts showcasing some of the special ingredients of the region. \nKnafeh Nabulsia\nThis dessert combines knafeh\, a finely shredded wheat pastry\, with a base of mild white cheese (known as Nabulsi\, originally from the Palestinian city of Nablus). It is baked until the pastry is golden and the cheese soft and gooey\, then it is all doused with a scented sugar syrup. This dish is recorded in the Levant as far back as the 10th century\, but the Ottoman Empire spread variations of it to across much of the Middle East. \nKaak bel Ajweh\nDelicious\, date-stuffed cookies flavoured with vanilla\, anise\, sesame seeds and mahlab\, a spice derived from cherry kernels that imparts a lovely marzipan aroma. These cookies are popular in Lebanon around Easter\, where they are known as “Crown” cookies\, their ring shape are thought to evoke Jesus’ crown of thorns. \nThe day will wrap up with an afternoon coffee break and chance to enjoy your freshly-made sweets. \n—– \n$125 +HST \n—–\nNewcomer Kitchen is a new project that invites groups of Syrian refugee women to use our kitchen to cook traditional Syrian dishes in a fun\, social setting. Meals are prepared and packaged\, and then sold online for pickup or delivery to pay for all the ingredients and provide an honorarium for the cooks. The project now supports over 55 women and paid out over $30\,000 directly into the community in 2016. \nLearn more about the Newcomer Kitchen project. \n—–\nEvery Monday\, The Depanneur invites TO’s best culinary talents to lead fun\, hands-on workshops. \nLearn more about Workshops at The Depanneur

Not only do they pride themselves in food that is steeped in culinary traditions and guard their recipes close to heart\, they undeniably affirm their cuisine as the best in the Middle East. As one of the world’s oldest inhabited cities\, Aleppo’s cuisine takes inspiration from the mosaic of cultures that have inhabited Syria over the millennia\, as well as more recent influences of the Ottomans and Armenians. \nTalk to Aleppians about food and they’ll sing a litany of delicacies culminating in one dish unique to their city. SUMMARY:NEWCOMER KITCHEN — April 20
DESCRIPTION:[chicken] Fatteh Djaj فتتة جاج\nFatteh (فتّة‎‎ meaning crushed or crumbs) is a broad category of Levantine dishes made with pieces of crispy flatbread layered with yogurt and other ingredients. It is popular across Egypt\, Palestine\, Lebanon\, Jordan and Southern Syria\, but uncommon further North. This dish is so closely associated with Syrian food that it is also known as shâmiyât (شاميات ) or ‘Damascene’. This recipe\, by Suher J. from Sweida\, is notable for its use of golden\, turmeric-and-spice-infused basmati rice and its garnish of butter-fried walnuts. The dish is built up in layers of bread\, rice\, yogurt & tahini sauce\, chicken\, nuts\, and garnishes. We will be preparing this dish in parts – crispy bread (dry)\, rice & chicken (to be warmed) and sauce (room temperature) separately\, so they can be combined at the last moment for the best combination of flavours\, temperatures and textures. \n[vegetarian] Fatteh Hummus فتتة حُمُّص\nFatteh with crispy pita\, seasoned rice\, yogurt-tahini sauce and walnuts\, with chickpeas instead of chicken. \nSalateh Naameh سلطة ناعمة\nThis quintessential Mediterranean salad can be found throughout the middle east\, with tomatoes\, cucumber\, and white onion are finely diced and seasoned with olive oil\, mint and lemon juice. \nJoz Al-Hind أقراص جوز الهند \nChewy coconut macaroon-like cookies with a hint of vanilla and lemon peel. \n$20 +HST \n\nMeals are available for pickup from The Depanneur\,\n1033 College Street (between Dufferin & Dovercourt) from 6–7pm\nfoodora sponsors FREE Delivery within 3km radius \n\nNewcomer Kitchen is a new project that invites groups of Syrian refugee women to use our kitchen to cook traditional Syrian dishes in a fun\, social setting. SUMMARY:NEWCOMER KITCHEN — April 13
DESCRIPTION:[beef] Mahashi Bialllahma محاشي باللحمة\n-or-\n[vegetarian] Mahashi Nabatia محاشي نباتية\nStuffed vegetables were cherished by the former Ottoman Empire\, and they made them popular from the Balkans to the Levant. Pale green young zucchinis are very popular\, but almost any vegetable can be Mashi (stuffed). Today it’s a combination of eggplants (batenjan)\, tomatoes (bandoura) and peppers (flefle)\, stuffed with a mix of ground halal beef and rice\, or a spiced rice mixture for a vegetarian option. \nMutabal Batenjan متبل باذنجان\nSyrian home cooking is notable for its economy and minimal waste. The pulp scooped out of the middle of the eggplants when they are cored to make Mahashi is not thrown out\, but rather cooked up and combined with yogurts\, tahini\, garlic & lemon to transform it into a delicious meze dip similar to baba ganoush. Served with fresh pita. \nFattoush فتوش\nThis popular Levantine salad is made using toasted or fried pieces of pita bread combined with mixed greens\, fresh vegetables like tomatoes\, cucumber and radish\, but vary according to season and region. Mint and parsley lend a freshness and fragrance\, and dried sumac (the same staghorn sumac that grows here in Ontario) gives the olive oil-based dressing a distinctive tangy flavour. \nNamoura نمُّورة\nAn classic Syrian dessert\, a rich buttery semolina and yogurt cake\, garnished with almonds and drizzled with a orange-blossom infused syrup. DESCRIPTION:Khyar Belaban خيار بلبن\n \n \n \n \n \n Fatayer al tofah فطاير تفاح \n \n \n\n[beef] Bulgur Bandoura برغل ببندورة \nBulgur\, whole wheat that has been parboiled\, dried and then cracked\, is one of the very nutritious staple grains in Syrian cuisine. It comes in a range of colours\, from pale yellow to dark brown\, and grinds\, from very fine to coarse. In this classic dish\, bulgur is cooked with tomatoes (bandoura)\, onions and olive oil to give it a rich\, tangy flavour and a moist texture almost approaching a risotto. It is topped with small cubes (suqaar) of halal beef\, that has been braised in a seasoned broth (which is also used to cook the bulgur)\, and garnished with some chickpeas\, parsley\, and pickles. \n[vegetarian] Bulgur Bandoura برغل ببندورة\nThe vegetarian version will be cooked in seasoned tomato juice with onions and olive oil\, generously topped with with extra chickpeas\, and garnished with colourful tangy pickles. \nKhyar Belaban خيار بلبن\nYogurt and cucumbers with a touch of garlic is popular combination throughout the Mediterranean\, but the addition of mint makes for an especially delightful\, cool and refreshing salad. \nFatayer al tofah فطاير تفاح\nThese crescent-shaped cookies are a specialty of Ghada\, one of our talented cooks. She says they are originally from Turkey\, but are widely made in Syria where they are know under a number of different names. These attractive\, buttery cookies are stuffed with a delicious homemade apple jam; slits in the cookie reveal the filling. \n$20 +HST \n\nMeals are available for pickup from The Depanneur\,\n1033 College Street (between Dufferin & Dovercourt) from 6–7pm\nfoodora sponsors FREE Delivery within 3km radius \n  \n\nNewcomer Kitchen is a new project that invites groups of Syrian refugee women to use our kitchen to cook traditional Syrian dishes in a fun\, social setting. SUMMARY:NEWCOMER KITCHEN — March 30
DESCRIPTION:[chicken] El Rgaga الرقاقه أو المكامير\nEl Rgaga (aka Al Makameer) is a traditional dish from the countryside around Daraa\, a city in the southwest of Syria near the border with Jordan. When there is a big occasion with many guests\, groups of neighbourhood women get together and make a big batch. Many layers of thinly rolled dough are layered with onions caramelized in olive oil and chicken that has been poached in a spiced broth\, and then baked until golden and crispy on top. (The name translates as “the chip”\, probably referring to the crunchy top layer that absorbs the flavours of the dish). \n[vegetarian]  Harraq Esbaoo حراق اصبعو\nA very old and well-known dish in Syria\, the name translates “burning his finger”. The notion is that the dish is so delicious\, that diners can’t resist going for it before it cools\, so they burn their fingers. Lentils and fresh\, hand-cut pasta are cooked together with spices then mixed with onions\, coriander\, and a tamarind & pomegranate molasses dressing\, then garnished with crispy fried pita croutons\, caramelized onions\, fresh coriander and fresh pomegranate seeds. \nOk\, here’s my stab at Syrian humour:\nHow did the Syrian hipster burn his fingers?\n He ate his Harraq Esbaoo before it was cool.\n[#rimshot] \nSalateh Jarjeer صلطة جرجير\nA refreshing salad of peppery arugula with fresh pomegranate and onions\, with a apple cider & lemon vinaigrette. \n“Bye Bye” Parfait باي باي\nThis specialty of Sweida is a variation of mahalabia\, a delicate milk pudding that is common sight at many family gatherings and baby showers. It features a base of crumbled butter cookies\, layered with an orange blossom scented custard\, more cookies\, and chocolate pudding and topped with a garnish of mixed nuts. It gets it’s nickname from the observation that the moment this popular dish arrives at the table\, then “Bye Bye”\, it’s gone! \n$20 +HST \nMeals are available for pickup from The Depanneur\,\n1033 College Street (between Dufferin & Dovercourt) from 6–7pm\nfoodora sponsors FREE Delivery within 3km radius \nC.O.D. delivery outside of the 3km range can be arranged in advance directly with Paul Adrian via text: 647-780-2024 or email: bleedinedgedesigns@gmail.com \n\nNewcomer Kitchen is a new project that invites groups of Syrian refugee women to use our kitchen to cook traditional Syrian dishes in a fun\, social setting. DESCRIPTION:[lamb] Tabakh Rohoo (طباخ روحو)\nThe cold winter months are the time to break out the luscious\, slow-cooked comfort foods like this delicious tomato-based eggplant stew with zucchini\, potato and small cubes of lamb. Similar to North African tagines or Persian khoresh\, it is redolent with warm spices and sometime enriched with some melted ghee before serving. Tabakh Rohoo is known as “Cook’s Soul”; whether that’s from the deeply comforting qualities of this kind of “soul food” or if it’s that the long\, slow cooking transforms the humble ingredients into revealing their sublime nature\, is up to you to decide. \n[vegetarian]\nAn equally rich and delicious version of the stew\, fortified with chickpeas. \nServed with Rez bel Shairieh\, a pilaf of rice and fried vermicelli noodles. \nHelawiyaat (حلويات)\nDried fruits and nuts have long been staples of the Middle Eastern pantry. DESCRIPTION:Fattoush فتوش\n \n \n \n \n \n Zalabeh زلابية\n \n \n\n  \n[chicken] Freekeh فريكة\nFreekeh is made from green durum wheat that processed in a special way to create a unique flavor. The wheat is harvested while the grains are yellow and the seeds still are soft; it then is piled and sun-dried. The piles are carefully set on fire so only the straw and chaff burn\, not the seeds. In these controlled conditions\, the high moisture content of the seeds prevents them from burning\, but imparts them with a unique smoky flavour. Next\, the roasted wheat is threshed and sun-dried before being cracked into smaller pieces so they resemble a green bulgur. This Syrian freekeh recipe is seasoned with onion\, butter\, black pepper\, cinnamon\, and cumin\, topped with a quarter chicken and garnished with fried nuts. \n[vegetarian] Freekeh فريكة\nThe vegetarian version of freekeh is made with green peas\, green onion\, butter-fried nuts\, fresh herbs and lemon\, served more as a warm meze salad\, with a side of cool yogurt. \nZalabeh زلابية\nDonuts are a universal language. Sticky sweet fried dough desserts can be found all over the world and this Syrian treat is right at the intersection of Greek loukoumades\, Mexican churros and Indian jalebi. Flour dough tinted with turmeric\, and flavoured with anise and mahlab (a almond-like spice made from cherry stones)\, fried until crispy and dunked in a wild honey syrup. SUMMARY:NEWCOMER KITCHEN — March 2
DESCRIPTION:[beef/chicken] Shorbat Silq Bis Adas شوربة سلق بعدس\nLentils have been an essential part of the Levantine winter pantry (mouneh) since biblical times; indeed\, Esau allegedly forfeited his birthright to Jacob for a bowl of lentil soup – one possibly not all that different than the one we are making tonight. This hearty winter soup is a whole\, warming meal; lentils and chard\, cooked with onions\, garlic and cilantro\, fortified with small cubes of halal beef (suqaar) and brought to life with a generous splash of lemon. \n[vegetarian]\nThis soup is also delicious (and #vegan & #GF) when made with added potatoes and vegetable stock. \nThe soups come with Khabbaz El Samun bel Toum (خبز السمون بالثوم): garlic bread with butter\, lemon\, parsley\, and black pepper. \nEjett Kousa عجة كوسا\nMade with finely sliced or shredded zucchini combined with green onion\, parsley\, garlic\, dried mint\, flour and eggs. It can be either formed into small pancakes and fried (think zucchini latke) or baked in a tray and sliced\, like a frittata or crustless quiche. \nS’fouf صفوف\nA light\, delicate semolina cake\, made golden with turmeric and fragrant with anise\, vanilla\, and coconut\, studded with black sesame seeds and topped with pistachio. A soft dough is handmade from flour\, salt and water and filled with cooked onions\, olive oil\, halal ground beef\, salt and pepper and then baked. A thick\, tangy yogurt sauce is prepared by cooking strained yogurt with starch\, which is then spiced with aromatic fried garlic. The dumplings are added to the warm sauce\, and the dish is garnished with fresh parsley\, mint and toasted pine nuts. SUMMARY:WORKSHOP: Home Cooking with Newcomer Kitchen
DESCRIPTION:An all-day\, family-friendly cooking workshop on Family Day! \nin 2016\, The Depanneur reached out to the Syrian newcomer community and has been delighting in the delicious results ever since. Our Newcomer Kitchen project has become something of a local sensation\, serving up 50 meals of traditional Syrian home cooking every week. \nIn that time\, many people have expressed tremendous interest in learning some of these fabulous recipes\, so for this Family Day Monday\, The Dep and Newcomer Kitchen are teaming up to offer a full-day\, hands-on workshop delving into a some of our most popular Syrian dishes. The class will cover a number of delicious and traditional Syrian recipes\, and will include a meze lunch and food to take home. \nBeing Family Day\, you are encouraged to bring children with you\, and kids under 12 are 1/2 price. They can help out in the kitchen and there will also be special cooking activities just for them. \n— Morning —\nMutabal kousa (متبل كوسا )\nSyrian home cooking is notable for its economy and minimal waste. The pulp scooped out of the middle of the zucchinis when they are cored to make Kousa Mahshi is not thrown out\, but rather cooked up and combined with tahini and lemon to transform it into a subtle and delicious meze dip akin to baba ganoush. \nKibbeh bel Senia (كبة بالصينية)\nKibbeh is one of the most quintessential Syrian dishes\, made from a thick dough of bulgur (steamed\, dried and cracked whole wheat). Many types of kibbeh are individually stuffed\, shaped and fried\, which can be very labour intensive\, but this delicious vegetarian kibbeh is stuffed with a combination of walnuts\, potatoes\, onions\, tomatoes and pomegranate seeds\, garnished with pine nuts\, baked in a tray like brownies! \nSalateh Naameh سلطة ناعمة\nThis essential Mediterranean salad can be found throughout the middle east\, with tomatoes\, cucumber\, and white onion are finely diced and seasoned with olive oil\, mint and lemon juice. \nKhabaz Saj (خبز الصاج)\nA simple fresh flatbread\, handmade on the traditional domed oven of the same name. \nLUNCH \n— Afternoon —\nKousa Mahshi كوسا محشي\nStuffed zucchinis were cherished by the former Ottoman Empire\, and they made them popular from the Balkans to the Levant. Most popular are the beautiful\, pale green young marrow or summer squash\, but regular zucchinis work just fine. They are hollowed out with a special implement called a manakra (an apple corer works well in a pinch)\, and stuffed with a mix of ground halal beef and rice\, or a spiced rice mixture for a vegetarian option. \nNamoura (نمُّورة )\nAn classic Syrian dessert\, a rich buttery semolina and yogurt cake\, garnished with almonds and drizzled with a orange-blossom infused syrup.\n—– \n$125 +HST\nKids under 12 are 1/2 price \n—–\nNewcomer Kitchen is a new project that invites groups of Syrian refugee women to use our kitchen to cook traditional Syrian dishes in a fun\, social setting. Meals are prepared and packaged\, and then sold online for pickup or delivery to pay for all the ingredients and provide an honorarium for the cooks. The project now supports over 55 women and paid out over $30\,000 directly into the community in 2016. \nLearn more about the Newcomer Kitchen project.\nhttp://newcomerkitchen.ca/ \n—–\nEvery Monday\, The Depanneur invites TO’s best culinary talents to lead fun\, hands-on workshops.

In Syria\, lentils\, with their high iron content\, are sometimes called the “meat of the poor” ( المجدرة لحم الفقراء); or “nails for your knees” (المجدرة مسمامير الركب) in the sense that they help keep you on your feet for a long time. In majaddarat\, brown lentils are boiled then bulgur is added to the broth; sliced onions slowly caramelized in olive oil\, until crispy and then the flavoured oil is added to the lentil-bulgur mix. The finished dish is topped with the fried onions\, and served with a garnish of fresh vegetables and a selection of pickles. While often served on it’s own as main dish\, we’ll be adding a Syrian-style tender braised-then-broiled halal chicken leg quarter to each dinner. \n[vegetarian] Majaddarat Bulgur مجدرة برغل\nThe hearty and fortifying Syrian vegetarian staple\, served with some cool\, creamy chickpea hummus on the side. \nSaltah Horania (سلطة حورانية)\nHoran is a broad highland plateau in Southwestern Syria that includes the cities of Daraa and Sweida\, and is where this refreshing tomato salad with white and green onions\, garlic\, mint\, olive oil & lemon hails from. \nRoz bel Haleeb رز بحليب\nWherever you find rice\, you’ll probably find a version of rice pudding. Recipes were never exact; more like simple instructions that vary between neighbourhoods\, and even families. A series of handfuls and pinches that\, when executed properly\, lead to extraordinary meals. One of the dishes that exemplifies this culinary ingenuity is called maldoum (ملضوم)\, an incredibly delicious layered meat and eggplant dish. The classic way to prepare this dish is over a grill\, where you alternate meat patties and eggplant slices on a skewer. When the dish is prepared over the grill\, it is called\, kabob banjan (كباب باذنجان). But if you don’t have access to a grill\, you can prepare kabob banjan in the oven\, and call it maldoum.” \n\nMaldoum can be found in kitchens from Turkey to Lebanon; this is a more rustic\, countryside version of of the dish\, that adds green peppers\, tomatoes and potatoes\, which are traditionally arranged in attractive layered patterns in a large shallow round pan before baking. It is served with Rez bel Shairieh\, a pilaf of rice and fried vermicelli noodles.\n\n[vegetarian] Maldoum ملضوم\nThe same dish\, but with more veggies\, no meat and a generous splash of olive oil. \nSalateh Malfouf سلطة ملفوف\nA cool\, refreshing salad made of chopped cabbage\, diced tomatoes and pomegranate seeds\, dressed with olive oil\, garlic\, lemon juice\, sumac\, and fresh mint. \nNammoura نموره\nOne of the most well-known traditional Syrian desserts; a simple cake of semolina\, butter\, sugar and yogurt drizzled with simple syrup scented with lemon. Highly regarded by the Ottoman Empire\, they spread across the Balkans\, North Africa and the Mediterranean\, but it may have been the Jewish diaspora that brought this Middle Eastern dish to Northern Europe and Russia. \nIn Syria\, cabbage rolls are known as malfouf (though it has many other regional names as well)\, and they are a popular winter dish; a healthy and complete meal that combines meat\, rice and vegetables. This recipe uses halal ground beef and rice seasoned with a Syrian version of baharat\, a mix of seven or eight warm spices that has countless variations across the region\, a legacy of Syria’s long history in the spice trade. \nThere is also a #vegetarian variation that uses chard leaves instead of cabbage\, that is stuffed with rice\, tomatoes\, onion\, garlic and parsley. Both are served with a side of yogurt and garnish of cucumbers and radishes. \nEjett Kousa عجة كوسا\nMade with finely sliced or shredded zucchini combined with green onion\, parsley\, garlic\, dried mint\, flour and eggs. DESCRIPTION:Salateh Malfouf سلطة ملفوف\n \n \n \n \n \n Barazek برازق\n \n \n\n[chicken] Freekeh فريكة\nFreekeh is made from green durum wheat that processed in a special way to create a unique flavor. \nSalateh Malfouf  سلطة ملفوف\nA cool\, refreshing salad made of chopped cabbage\, diced tomatoes and pomegranate seeds\, dressed with olive oil\, garlic\, lemon juice\, sumac\, and fresh mint. \nBarazek برازق\nA crisp\, buttery cookie studded with pistachio pieces and covered in sesame seeds\, barazek are one of the most famous sweets of Damascus\, and a popular gift often brought by people visiting from Syria. \n$20 +HST \nMeals are available for pickup from The Depanneur\, 1033 College Street (between Dufferin & Dovercourt) from 6–7pm on Thursday\, Nov. 10\nfoodora sponsors FREE Delivery within 3km radius \nMeals go on sale on Tuesday at 7am.\nPlease indicate “PICKUP” or “DELIVERY” in the Order Notes at the Checkout. \n\nNewcomer Kitchen is a new project that invites groups of Syrian refugee women to use our kitchen to cook traditional Syrian dishes in a fun\, social setting. This hearty winter soup is a whole\, warming meal; lentils\, potatoes and chard\, cooked with onions\, garlic and cilantro in a rich halal chicken stock\, fortified with small cubes of halal beef (suqaar) and brought to life with a generous splash of lemon. \n[vegetarian]\nThis soup is also delicious (and #vegan & #GF) when made with vegetable stock. \nThe soup comes with two delicious sides: Khabbaz El Samun bel Toum (خبز السمون بالثوم): garlic bread with butter\, lemon\, parsley\, and black pepper\, and Mutabal Kousa ( متبل كوسا)\, a delicious meze dip made with zucchini\, tahini and yogurt. \nKnafeh Nabulsia كنافة نابلسية\nThis version of knafeh\, a dessert with a base of mild white cheese (also known as Nabulsi) topped with a crispy shredded wheat surface\, doused with a scented sugar syrup\, originates in the Palestinian city of Nablus as far back as 10th century\, but variations spread with the Ottoman Empire to include much of the Middle East. The small\, young pale green zucchini known as white marrows are the most popular. They are hollowed out with a special tool and stuffed with a mix of spiced ground halal beef\, rice and spices\, and cooked in a tomato broth with a hint of cinnamon. It is served with bulgur b-shaaria (برغل بشعيرية‎)\, a kind of pilaf of bulgur wheat and fried vermicelli noodles \n[vegetarian] Ejett Kousa عجة كوسا\nThis dish ingeniously takes advantage of the delicious zucchini pulp that is hollowed out when preparing Koush Mahsi\, though it can just as easily be made from scratch. Zucchini is finely sliced or shredded and combined with green onion\, parsley\, garlic\, dried mint\, flour and eggs\, and can be either formed into small pancakes and fried (think zucchini latke) or baked in a tray and sliced\, like a frittata or crustless quiche. It comes with a bit of tzasiki-like yogurt and cucumber (keyar bel laban) along with bulgur and vermicelli. \nSalateh Naameh سلطة ناعمة\nThis quintessential Mediterranean salad can be found throughout the middle east\, with tomatoes\, cucumber\, and white onion are finely diced and seasoned with olive oil\, mint and lemon juice. \nQatayef قطايف\nQatayef (or Katayef) is kind of sweet dumpling filled with cream or nuts commonly served during the month of Ramadan\, traditionally prepared by street vendors as well as households throughout the Levant and Egypt. A yeasted batter is used to make small round pancakes which are filled with ricotta cheese or a mixture of nuts and/or dried fruit. They are then sealed up into half-moons and deep-fried until golden and crispy\, before being dunked in honey or sugar syrup. \n$20 +HST \nMeals are available for pickup from The Depanneur\, 1033 College Street (between Dufferin & Dovercourt) from 6–7pm on Thursday\, Oct. 27\nfoodora sponsors FREE Delivery within 3km radius \nMeals go on sale on Tuesday at 7am.\nPlease indicate “PICKUP” or “DELIVERY” in the Order Notes at the Checkout. \n\nNewcomer Kitchen is a new project that invites groups of Syrian refugee women to use our kitchen to cook traditional Syrian dishes in a fun\, social setting. Meals are prepared and packaged\, and then sold online for pickup or delivery to pay for all the ingredients and provide an honorarium for the cooks. \nWe also offer 1 spot to help/hang out in the kitchen\, learn the recipes and join the ladies for family meal on Thursday afternoon. We are asking for a $50 donation for this\, which will go to topping up the $ we have to share with the cooks. This is available for purchase online\, on a first-come\, first-served basis. \nProceeds from the sale of meals goes directly to the newcomer cooks. However this does not cover the costs of the enormous amount of behind-the-scenes coordination required to keep this project going. You can support the Newcomer Kitchen project directly and our vision of expanding this model to support more women in more neighbourhoods!
