DESCRIPTION:Salata Na’ameh  سلطة ناعمة\n				\n			\n				\n			\n				\n				Lazakiat  لزاقيات\n				\n		\n\nOur last Newcomer Kitchen of 2016!\nAfter this week\, we’ll be focusing our energy on our upcoming fundraiser Sofra Dayma — a special evening in support of Newcomer Kitchen\, and then taking a well-earned break until mid-January. \n[chicken] Kabsa كبسة‎‎\nKabsa is a family of rice dishes believed to be indigenous to Saudi Arabia\, where it is commonly regarded as a national dish. I can be found in most Arab states of the Persian Gulf (where it is also known as makbūs مكبوس‎‎)\, and into Jordan\, Palestine and Southern Syria.\nThese dishes are usually made long-grain\, such as basmati\, meat – in our case halal chicken – some finely cut vegetables\, and a mixture of spices\, of which there are countless regional variations\, but might include black pepper\, cloves\, cardamom\, saffron\, cinnamon\, black lime\, bay leaves and nutmeg. Mint and parsley lend a freshness and fragrance\, and dried sumac (the same staghorn sumac that grows here in Ontario) gives the olive oil-based dressing a distinctive tangy flavour. (#vegetarian\, can be #GF) \nFatayer are a whole category delicious small baked treats that range from open-face\, pizza-like flatbreads to cute little baked turnovers\, with countless different shapes and fillings. Tonight will feature a cheese fatayer\, as well as a vegan options such as muhamarra (spicy red pepper) or zataar (thyme and sesame). \nThe Main ~ El Maldoum ملضوم  |   Khyar belaban خيار بلبن \nMaldoum can be found in kitchens from Turkey to Lebanon; this is a more rustic\, countryside version of of the dish\, that adds green peppers\, tomatoes and potatoes\, which are traditionally arranged in attractive layered patterns in a large shallow round pan before baking. A meat and vegetarian version will be served alongside a combination of short-grain rice and fried vermicelli noodles. This dish will be served with Khyar Belaban. Much like tzatziki\, it’s well-known Greek cousin\, this combines cool yogurt with garlic and cucumbers\, but the addition of mint makes for an especially cool and refreshing salad. \nDessert ~ Harissa هريسة  |  Figs & Dates with Tahini and Grape Molasses \nA relative of Namoura or Babousa\, Harissa is one of the region’s many delicious syrup-soaked semolina cakes. This one doesn’t use yogurt\, but rather tahini\, giving an extra rich and nutty flavour. DESCRIPTION:Ejett Kousa عجة كوسا\n				\n			\n				\n			\n				\n				Sfouf  صفوف\n				\n		\n\nMalfouf ملفوف\nMany people may think of cabbage rolls as a typically Polish or Ukrainian dish\, but in fact\, they have been made in Syria and the Levant for thousands of years. Highly regarded by the Ottoman Empire\, they spread across the Balkans\, North Africa and the Mediterranean\, but it may have been the Jewish diaspora that brought this Middle Eastern dish to Northern Europe and Russia. \nIn Syria\, cabbage rolls are known as malfouf (though it has many other regional names as well)\, and they are a popular winter dish; a healthy and complete meal that combines meat\, rice and vegetables. This recipe uses halal ground beef and rice seasoned with a Syrian version of baharat\, a mix of seven or eight warm spices that has countless variations across the region\, a legacy of Syria’s long history in the spice trade. \nThere is also a #vegetarian variation that uses chard leaves instead of cabbage\, that is stuffed with rice\, tomatoes\, onion\, garlic and parsley. Both are served with a side of yogurt and garnish of cucumbers and radishes. \nEjett Kousa عجة كوسا\nMade with finely sliced or shredded zucchini combined with green onion\, parsley\, garlic\, dried mint\, flour and eggs. DESCRIPTION:Ejett Kousa عجة كوسا\n				\n			\n				\n			\n				\n				Salata Na’ameh  سلطة ناعمة\n				\n			\n				\n			\n				\n				Qatayef قطايف\n				\n		\n\n[beef] Kousa Mahshi كوسا محشي\nStuffed zucchinis are a dish cherished by the former Ottoman Empire\, and popular from the Balkans to the Levant. The small\, young pale green zucchini known as white marrows are the most popular. They are hollowed out with a special tool and stuffed with a mix of spiced ground halal beef\, rice and spices\, and cooked in a tomato broth with a hint of cinnamon. It is served with bulgur b-shaaria (برغل بشعيرية‎)\, a kind of pilaf of bulgur wheat and fried vermicelli noodles \n[vegetarian] Ejett Kousa عجة كوسا\nThis dish ingeniously takes advantage of the delicious zucchini pulp that is hollowed out when preparing Koush Mahsi\, though it can just as easily be made from scratch. Zucchini is finely sliced or shredded and combined with green onion\, parsley\, garlic\, dried mint\, flour and eggs\, and can be either formed into small pancakes and fried (think zucchini latke) or baked in a tray and sliced\, like a frittata or crustless quiche. It comes with a bit of tzasiki-like yogurt and cucumber (keyar bel laban) along with bulgur and vermicelli. \nSalateh Naameh سلطة ناعمة\nThis quintessential Mediterranean salad can be found throughout the middle east\, with tomatoes\, cucumber\, and white onion are finely diced and seasoned with olive oil\, mint and lemon juice. \nQatayef قطايف\nQatayef (or Katayef) is kind of sweet dumpling filled with cream or nuts commonly served during the month of Ramadan\, traditionally prepared by street vendors as well as households throughout the Levant and Egypt. A yeasted batter is used to make small round pancakes which are filled with ricotta cheese or a mixture of nuts and/or dried fruit. DESCRIPTION:Yakaneh Batata bel Batinjan ( يخنة بطاطا و باذنجان)\n				\n			\n				\n			\n				\n				Tabbouleh  تبولة‎‎\n				\n			\n				\n			\n				\n				M’a’krona (معكرونة)\n				\n		\n\n[beef] Dawood Basha (داوود باشا)\nMeatballs in tomato sauce; from Italian Polpette to Indian Kofta\, nearly every cuisine has some variation of this delicious comfort food staple. In Syria\, this dish inherited the name of an Ottoman governor (“pasha”\, or “basha” in Arabic\, which does not have the letter “p”)\, Daoud\, who administered Mt. Lebanon in the 18th century\, and reputedly had one of his chefs create this recipe especially for him. The dish is deceptively simple\, ground beef meatball seasoned with onion\, black pepper and allspice\, in a rich tomato & onion sauce\, served alongside Rez bel Shairieh (rice with vermicelli). \n[vegetarian] Yakaneh Batata bel Batinjan ( يخنة بطاطا و باذنجان)\nPotatoes and eggplants are popular (if relatively recent) ingredients in Mediterranean cooking\, whether in Greek Moussaka or Turkish Güveç. Yakaneh is general Syrian name used to describe hearty\, home-style stews; in this case one featuring batata (potato) and batinjan (eggplant) in a tomato & onion gravy\, with a hint of curry powder. \nTabbouleh (تبولة‎‎ )\nOriginally from the mountains of Syria and Lebanon\, tabbouleh has become one of the most popular salads in the Middle East. A fragrant herb salad of parsley and mint\, tomato and onion\, with a scattering of bulgur\, and seasoned with olive oil\, lemon\, and salt. \nM’a’krona (معكرونة)\nMacaroons\, macarons (and macaroni) share a complicated linguistic history\, with roots in medieval Arabic and Sicilian trade in semolina\, the same kind of hard durum wheat that these delicious cookies are made from. DESCRIPTION:Harraq Esbaoo حراق اصبعو \n				\n			\n				\n			\n				\n				Salateh Malfouf سلطة ملفوف\n				\n			\n				\n			\n				\n				Barazek  برازق\n				\n		\n\n[chicken] El Rgaga (الرقاقه أو المكامير)\nEl Rgaga (aka Al Makameer) is a traditional dish from the countryside around Daraa\, a city in the southwest of Syria near the border with Jordan. When there is a big occasion with many guests\, groups of neighbourhood women get together and make a big batch. Many layers of thinly rolled dough are layered with onions caramelized in olive oil and chicken that has been poached in a spiced broth\, and then baked until golden and crispy on top. (The name translates as “the chip”\, probably referring to the crunchy top layer that absorbs the flavours of the dish). This dish was originally suggested by Majda\, so we reached out to Maryam and her daughter-in-law\, who are also from Daraa and experts in making it. \n[vegetarian] Harraq Esbaoo حراق اصبعو\nA very old and well-known dish in Syria\, the name translates “burning his finger”. The notion is that the dish is so delicious\, that diners can’t resist going for it before it cools\, so they burn their fingers. In Jordan\, where many people consider this their national dish\, it is traditionally made with lamb and rice covered in a tangy white sauce made from keshk or jameed\, a kind of dried yogurt. It is served on huge platters (sometime with the lamb head as a dramatic centerpiece!)\, and guests gather around and reach into the communal dish together with their right hands. (Keeping one’s left hand behind one’s back is considered polite). In this classic dish\, bulgur is cooked with tomatoes (bandoura)\, onions and olive oil to give it a rich\, tangy flavour and a moist texture almost approaching a risotto. DESCRIPTION:Vegetarian Freekeh with Chickpeas  فريكة\n				\n			\n				\n			\n				\n				Khyar Belaban خيار بلبن\n				\n			\n				\n			\n				\n				Knafeh Nabulsia  كنافة نابلسية\n				\n		\n\nMENU — August 18 \n——\n[chicken]  Freekeh  فريكة\nFreekeh is made from green durum wheat that processed in a special way to create a unique flavor. The wheat is harvested while the grains are yellow and the seeds still are soft; it then is piled and sun-dried. The piles are carefully set on fire so only the straw and chaff burn\, not the seeds. In these controlled conditions\, the high moisture content of the seeds prevents them from burning\, but imparts them with a unique smoky flavour. Next\, the roasted wheat is threshed and sun-dried before being cracked into smaller pieces so they resemble a green bulgur. This Syrian freekeh recipe is seasoned with onion\, butter\, black pepper\, cinnamon\, and cumin\, topped with a quarter chicken and garnished with fried nuts. \n[vegetarian]  Freekeh  فريكة\nThe vegetarian version of freekeh is made with chickpeas\, green onion\, fresh herbs and lemon\, served more as a cool meze salad. \nKhyar Belaban خيار بلبن\nYogurt and cucumbers with a touch of garlic is popular combination throughout the Mediterranean\, but the addition of mint makes for an especially delightful\, cool and refreshing summer salad. \nKnafeh Nabulsia  كنافة نابلسية\nThis version of kanafeh\, a dessert with a base of mild white cheese (also known as Nabulsi) topped with a crispy shredded wheat surface\, doused with a scented sugar syrup\, originates in the Palestinian city of Nablus as far back as 10th century\, but variations spread with the Ottoman Empire to include much of the Middle East. Recipes were never exact; more like simple instructions that vary between neighbourhoods\, and even families. A series of handfuls and pinches that\, when executed properly\, lead to extraordinary meals. One of the dishes that exemplifies this culinary ingenuity is called maldoum (ملضوم)\, an incredibly delicious layered meat and eggplant dish. The classic way to prepare this dish is over a grill\, where you alternate meat patties and eggplant slices on a skewer. When the dish is prepared over the grill\, it is called\, kabob banjan (كباب باذنجان). But if you don’t have access to a grill\, you can prepare kabob banjan in the oven\, and call it maldoum.” \nMaldoum can be found in kitchens from Turkey to Lebanon; this is a more rustic\, countryside version of of the dish\, that adds green peppers\, tomatoes and potatoes\, which are traditionally arranged in attractive layered patterns in a large shallow round pan before baking. DESCRIPTION:Fattoush  فتوش\n				\n			\n				\n			\n				\n				Joz Al-Hind كاتو جوز الهند\n				\n		\n\nMENU — July 28 \n——\n[chicken]  Molokhia  ملوخية‎‎\nMolokhia is dish that goes by many names; I’ve come across at least half a dozen English spellings alone. It’s based on the leaves of the jute plant (the same one that produces jute fibre for rope & fabric)\, but known by many other names as well\, including West African sorrel\, bush okra and Jew’s mallow. This plant has been under cultivation in the Levant for millennia\, and was likely on the table of the ancient Egyptians. \nWhile a popular dish throughout the Middle East\, it is virtually unknown in North America. I have found only a single local farmer growing it\, as an experiment\, and she has only found a single customer for it so far. (Well\, we can now make it two!). This week’s dish will use some fresh\, organic molokhia grown and donated by Kathy Horne of Birdsong Gardens at Fresh CIty Farms in Downsview\, as well as imported product sourced at Middle Eastern specialty markets in Mississauga. \nFor the Syrian version of this dish\, this very healthy\, dark leafy green is cooked with garlic\, coriander and lemon\, and combined with shredded chicken that has been cooked separately in a broth with onion and spices. The cooked vegetable is topped with chicken and served alongside Rez bel Shairieh (rice with vermicelli). \n[vegetarian]  Molokhia  ملوخية‎‎ \nThe same dish\, but topped with whole mushrooms. \nFattoush  فتوش\nThis popular Levantine salad is made using toasted or fried pieces of pita bread combined with mixed greens\, fresh vegetables like tomatoes\, cucumber and radish\, but vary according to season and region. Stuffed with a mix of spiced ground halal beef\, lamb and rice\, and cooked with tomato and cinnamon\, the meat version is served hot\, as a main course\, while the meatless version is considered an “olive-oil dish” and is often eaten at room temperature or warm. This version features Maqdoos\, small eggplants that are fried until tender and then stuffed with a savoury spiced meat and nut filling. As Islamic culture spread across the world it brought with it many dishes\, and brought back many inspirations and influences. So it comes as no surprise that there are countless kebab dishes in India\, nor that Indian culinary ideas have also filtered back through to the Middle East. Kebab Hindi\, or “Indian-Style Kebab”\, is a long-standing traditional Syrian favourite\, even as cooking meat in a tomato and onion-based reduction is a common Indian technique. This dish features skewers of a combination of halal ground beef and lamb garnished with pine nuts\, and is served alongside Rez bel Shairieh (rice with vermicelli). \n[vegetarian]   Yalanji   يالنجي\nStuffed grape vine leaves can be found on tables all around the Eastern Mediterranean. This Syrian version features a rice filling seasoned generously with parsley\, mint\, garlic\, onion and black pepper; some cooks add a bit of finely ground coffee that adds complexity and depth. This version features a classic filling of ground lamb\, beef\, spices and pine nuts\, and the finished kibbehs are cooked in a rich yogurt sauce. Our cook even made the yogurt from scratch last week! A soft dough is handmade from flour\, salt and water and then filled with cooked onions\, olive oil\, halal ground beef\, salt and pepper and then baked. A thick\, tangy yogurt sauce is prepared by cooking strained yogurt with starch\, which is then spiced with aromatic fried garlic and coriander. The dumplings are added to the sauce and the dish is served alongside Rez bel Shairieh (rice with vermicelli). \n[vegetarian] Fasolia bel Zait with Rez bel Shairieh  فاصوليا بالزيت و رز بالشعرية\nGreen beans and garlic slow-cooked in olive oil with tomatoes and garnished with tart pomegranate molasses; served with a side of Rez bel Shairieh (rice with vermicelli). \nSalatet Batata سلطة بطاطا\nCubes of tender potato combined with tomatoes and finely cut fresh mint leaves and drizzled with olive oil. \nNammoura  نموره\nOne of the most popular traditional Syrian desserts\, this simple cake of semolina\, butter\, sugar and yogurt is garnished with slivered almonds before being baked. The warm cake is drizzled with simple syrup scented with lemon. This will be available for purchase online\, on a first-come\, first-served basis. \nMenu — June 2\n——\nBurgul Behommos برغل بحمص [chicken]\nBurgul (aka bulgur wheat)\, is a dried cracked wheat that is an ancient staple of the Middle and Near East. It is typically made from whole grain durum wheat that has been coarsely ground\, soaked\, steamed and dried\, a process that enhances its shelf life and nutritional profile. Compared to white rice\, bulgur has more fiber and protein\, a lower glycemic index\, and higher levels of most vitamins and minerals.\nBurgul Behommos is a festive dish which many Syrians take pride in cooking for family gatherings and celebrations. Chicken and chickpeas are boiled with spices and set aside. Then the burgul is cooked in the rich chicken broth\, before being re-combined with the chickpeas and topped with the deboned chicken. \nMajaddarat Bulgur مجدرة برغل [vegetarian]\nWell known in many Syrian villages\, this staple dish of bulgur\, lentils and onions is highly regarded for its nutritional value and health benefits. Brown lentils are boiled then bulgur is added to the broth. Sliced onions slowly caramelized in olive oil\, until crispy and then the flavoured oil is added to the lentil bulgur mix. The finished dish is topped with fried onions\, and served with fresh yogurt\, some fresh vegetables and a selection of pickled turnips\, small cucumbers and hot peppers. \nSalateh Naameh سلطة ناعمة\nThis “fine salad” can be found throughout the middle east\, with tomatoes\, cucumber\, and white onion are finely diced and seasoned with olive oil\, mint and lemon juice. The perfect\, fresh compliment to hearty burgul dishes. \nHalaweh bel Jebn حلاوة بالجبن\nSyria is home to a wide variety of cheeses\, some of which make appearances in their delicious desserts. For this dish\, an outer layer is prepared with semolina\, sugar\, and a stretchy\, chewy cheeze like mozzarella\, and then rolled around a cool milky cheese like ricotta. Thin\, yeasted wheat flour dough is stuffed with a mixture of cooked onions and halal ground beef spiced with black pepper\, and then baked (or sometimes fried). We are going to try and bake some of these in the wood-fired bread oven in Dufferin Grove Park\, weather and logistics permitting.\n\n\n \n\n\n[vegetarian] Harraq Esbaoo حراق اصبعو \n\n\nby Ameena AlShaar from Damascus. \n\n\nA very old and well-known dish in Syria\, the name translates “burning his finger”. The notion is that the dish is so delicious\, that diners can’t resist going for it before it cools\, so they burn their fingers.
