DESCRIPTION:Saltett hindbeh  سلطة هندبة أو هندباء \n				\n			\n				\n			\n				\n				Fatayer al tofah فطاير تفاح \n				\n		\n\n[chicken] Burgul behommos برغل بحمص\nBurgul (aka bulgur wheat)\, is a dried cracked wheat that is an ancient staple of the Middle and Near East. It is typically made from whole grain durum wheat that has been coarsely ground\, soaked\, steamed and dried\, a process that enhances its shelf life and nutritional profile. Compared to white rice\, bulgur has more fiber and protein\, a lower glycemic index\, and higher levels of most vitamins and minerals. \nBurgul behommos is very ancient dish in Syria\, and especially well known in the city of Lattakia. It is a festive dish which many Syrians take pride in cooking for family gatherings and celebrations. Chicken and chickpeas are boiled with spices and set aside. Then the burgul is cooked in the rich chicken broth\, before being re-combined with the chickpeas and topped with the deboned chicken and roasted almonds. DESCRIPTION:Khyar Belaban خيار بلبن\n				\n			\n				\n			\n				\n				Baloza بالوظة\n				\n			\n		\n\n\n[Beef] Damascus-style Molokhia with ground beef ملوخية ع الطريقة الشامية باللحمة \n\n\nMolokhia is dish that goes by many names; I’ve come across at least half a dozen English spellings alone. While a popular dish throughout the Middle East\, it is virtually unknown in North America. It’s based on the leaves of the mallow or jute plant (the same one that produces jute fibre for rope & fabric)\, but known by many other names as well\, including West African sorrel\, bush okra and Jew’s mallow. This plant has been under cultivation in the Levant for millennia\, and was likely on the table of the ancient Egyptians.\n\n\n \n\n\nThe leaves are usually found dried and powdered\, but they are now in season\, so fresh\, green leaves can be used can be used to prepare Molokhia in a style popular in Damascus. It is popular across Egypt\, Palestine\, Lebanon\, Jordan and Southern Syria\, but uncommon further North. This dish is so closely associated with Syrian food that it is also known as shâmiyât (شاميات ) or ‘Damascene’. This recipe\, by Soheer J. from Sweida\, is notable for its use of golden\, turmeric-and-spice-infused basmati rice and its garnish of butter-fried walnuts. The dish is built up in layers of bread\, rice\, yogurt & tahini sauce\, chicken\, nuts\, and garnishes. DESCRIPTION:Salatet El Fijil (سلطة الفجل)\n				\n			\n				\n			\n				\n				Saltah Horania (سلطة حورانية)\n				\n			\n				\n			\n				\n				Tamaria (تمرية)\n				\n		\n\n  \nPICK UP ORDERS ONLY AFTER 4PM\nKibbeh\, a dish of bulgur wheat dough wrapped around flavourful fillings\, is one of the the most famous of all Syrian dishes… I’ve been told that there are more than 30 types of kibbeh — over 20 kinds in Damascus alone — some eaten raw\, others baked\, fried or grilled. Tonight we’re making a round kibbeh popular in the coastal region of Lattakia. \n[Meat] Kibbeh Mishwiyeh كبة مشوية\nBulgur wheat\, finely ground halal beef and spices are combined and formed into a round\, domed shape\, stuffed with a spiced mixture of fried onions\, ground beef\, pomegranate molasses and toasted pine nuts. In Lattakia\, these are often grilled over an open fire — the name translates to ‘grilled kibbeh’ — but these can also be brushed with butter and then baked with a piece of charcoal to lend it a smoky flavour. \n[Vegetarian] Kibbeh Mishwiyeh\nThis vegetarian version of Kibbeh Mishwiyeh is made with a bulgur and potato dough\, and a filling of mozzarella cheese and mushrooms. \nBoth Kibbeh come with Salatet El Fijil (سلطة الفجل)\, or “Radish Salad”\, a popular side dish accompaniment\, though it more of a dip like baba ganoush or hummus than a salad. It is made of grated radishes mixed with tahini\, garlic\, yogurt and lemon juice. \nSalatah Horania سلطة حورانية\nNow that local Ontario tomatoes are in season\, it’s the perfect time for this delicious Syrian tomato salad. It gets it name from Horan\, a broad highland plateau in Southwestern Syria that includes the cities of Daraa and Sweida\, that has a good climate for garden vegetables. DESCRIPTION:Salatet Shmandar سلطة شمندر\n				\n			\n				\n			\n				\n				Mahalabia مهلبية\n				\n			\n		\n\n[chicken] El R’gaga (الرقاقه أو المكامير)\nEl R’gaga (aka Al Makameer) is a traditional dish from the countryside around Daraa\, a city in the southwest of Syria near the border with Jordan. When there is a big occasion with many guests\, groups of neighbourhood women get together and make a big batch. Many layers of thinly rolled dough are layered with chicken that has been poached in a spiced broth\, and onions caramelized in olive oil. DESCRIPTION:In the last two years\, Newcomer Kitchen has tapped into the tremendous culinary talent in the newcomer Syrian community to create exciting economic and social opportunities. In that time\, many people have expressed interest in learning some of their fabulous recipes. \n\n\n \n\n\nSo now Newcomer Kitchen is offering a fun\, hands-on workshop exploring several traditional Syrian dips\, typical of the spread of “mezze” appetizers that make up the start of many Middle Easter meals.\n\n\n \n\n\nHummous Shmander \n\n\nA traditional beet-based meze dip popular in Syria\, especially in Aleppo. A colourful relative of hummus\, it’s made with beets\, chickpeas\, tahini and parsley seasoned with a bit garlic\, and garnished with pomegranate molasses\, lemon\, za’atar and walnuts.\n\n\n \n\n\nM’tabbal Koussa \n\n\nSimilar to baba ganoush\, this light zucchini-based dip is cool and refreshing\, made with combination of thick yogurt and tahini\, seasoned with a bit garlic\, lemon and cumin.\n\n\n \n\n\nMuhammara \n\n\nA rich\, complex and slightly spicy dip of roasted red peppers\, tomato\, walnuts\, pomegranate molasses and Aleppo pepper. This class will cover two different styles (there are more than 25!)\, and we will enjoy eating them together with a fresh and flavourful fattoush salad. \nKibbeh Lahmeh\nA classic version of one of the the most traditional and famous Syrian dishes. Bulgur wheat\, finely ground halal beef and spices are combined and formed into small football-shaped dumplings\, stuffed with a spiced mixture of ground beef and toasted pine nuts. DESCRIPTION:Bulgur bel Sharia برغل بالشعرية\n				\n			\n				\n			\n				\n				Salateh Naameh سلطة ناعمة\n				\n			\n				\n			\n				\n				Roz bel Haleeb  رز بحليب\n				\n		\n\n[beef] Maldoum ملضوم\nWhen researching this dish\, I found a lovely description of it on the blog of Tony Tahhan\, a Fulbright scholar who has spent time studying the food culture in Aleppo. \n“One thing I learned about Syrian cuisine is that it is resourceful. Recipes were never exact; more like simple instructions that vary between neighbourhoods\, and even families. A series of handfuls and pinches that\, when executed properly\, lead to extraordinary meals. One of the dishes that exemplifies this culinary ingenuity is called maldoum (ملضوم)\, an incredibly delicious layered meat and eggplant dish. The classic way to prepare this dish is over a grill\, where you alternate meat patties and eggplant slices on a skewer. When the dish is prepared over the grill\, it is called\, kabob banjan (كباب باذنجان). But if you don’t have access to a grill\, you can prepare kabob banjan in the oven\, and call it maldoum.” \nMaldoum can be found in kitchens from Turkey to Lebanon; this is a more rustic\, summary version of of the dish\, that take advantage of the lovely local eggplants\, peppers\, zucchini and tomatoes that are in season. All the sliced vegetables are traditionally arranged in attractive layered patterns in a large shallow round pan before baking. \n[vegetarian] Maldoum ملضوم\nThe same dish\, but with more veggies\, no meat\, and a generous splash of olive oil. \nBoth come with a side of bulgur bel sharia\, bulgur wheat cooked with fried vermicelli \nSalatah Naameh سلطة ناعمة \nThis “fine salad” can be found throughout the middle east\, with tomatoes\, cucumber\, and white onion are finely diced and seasoned with olive oil\, mint and lemon juice. \nRoz bel Haleeb رز بحليب \nWherever you find rice\, you’ll probably find a version of rice pudding. DESCRIPTION:Baba Ganouj bil Khodra  بابا غنوج بالخضرا\n				\n			\n				\n			\n				\n				Asawar El Sit (سوار الست)\n				\n			\n		\n\n[chicken] Molokhia ملوخية‎‎\nMolokhia is dish that goes by many names; I’ve come across at least half a dozen English spellings alone. While a popular dish throughout the Middle East\, it is virtually unknown in North America. It’s based on the leaves of the jute plant (the same one that produces jute fibre for rope & fabric)\, but known by many other names as well\, including West African sorrel\, bush okra and Jew’s mallow. This plant has been under cultivation in the Levant for millennia\, and was likely on the table of the ancient Egyptians. \nThe leaves can be found fresh (only rarely in Toronto)\, frozen\, dried or powdered. For the Syrian version of this dish\, dried whole leaves are preferred for the best flavour; they are cooked with garlic\, coriander and lemon. The cooked greens are topped with shredded chicken that has been poached separately in a broth with onion and spices\, and served alongside basmati rice. \n[vegetarian] Molokhia ملوخية‎‎\nThe same dish\, but with mushrooms instead of chicken\, and also served with basmati rice. \nBaba Ganouj bil Khodra بابا غنوج بالخضرا\nA slightly different take on one of the most famous and popular Middle Eastern mezze dips\, this recipe comes from Fatma\, from the city of Edlib. Like most baba ganouj\, the eggplants are roasted in oven to give it a distincty smoky flavour\, then combined with with tahini\, garlic and lemon juice\, but this recipe also adds parsley\, white onion\, red & green pepper\, tomato\, and fresh mint\, and is finished with olive oil and pomegranate seeds. Served with fresh pita bread \nAsawar El Sit أساور الست\nA traditional Aleppan baklava made from phyllo dough that has been rolled into a cylinder\, then again into the form of a ring (the name means “bracelet”). This Syrian recipe\, by Khadija El Ebrahim from the city of Kamishli\, features a ground lamb and rice filling seasoned generously with garlic\, mint\, Aleppo pepper\, black pepper\, with a bit of pepper paste. The carefully stuffed and rolled leaves are interleaved with potatoes and lamb bones before being covered with lamb broth\, whole garlic gloves\, lemon\, and olive oil\, before a slow cooking that infuses the whole dish with an incredible depth of flavour. Served with fresh pita bread. \n[vegetarian] Yalanji  بالنجي\nThe equally popular vegetarian version features a seasoned rice filling flecked with parsley\, pomegranate molasses\, tomato\, onion\, garlic\, mint\, olive oil\, lemon\, black pepper\, and uniquely seasoned with a tiny bit of ground coffee. These are also cooked with along with some potato\, and served with fresh pita bread \nSalatet Alkhus سلطة الخس\nA simple green salad of romaine lettuce\, tomatoes\, cucumber and carrots\, radish with fresh mint and a lemon\, garlic\, olive oil\, seasoned with Sumac. \nHalaweh bel Jebin حلاوة بالجبن\nSyria is home to a wide variety of cheeses\, some of which make appearances in their delicious desserts. For this dish\, an outer layer is prepared with semolina\, sugar\, and a stretchy\, chewy cheese like mozzarella\, and then rolled around a cool milky cheese like ricotta. It can be found in most Arab states of the Persian Gulf (where it is also known as makbūs مكبوس‎‎)\, and also in Jordan\, Palestine and Southern Syria.\n\n\n \n\n\nThese dishes are usually made long-grain\, such as basmati\, meat – in our case halal chicken – some finely cut vegetables\, and a mixture of spices\, of which there are countless regional variations\, but might include black (dried) lime\, cloves\, cardamom\, saffron\, cinnamon\, black pepper\, bay leaves and nutmeg. This dish\, a flavourful eggplant stew with green peppers\, chickpeas and beef meatballs is a relative of Greek Moussaka or Lebanese Maghmour. The vegetarian version of this dish is equally popular throughout Syria and Lebanon.\n\n\n \n\n\nBoth are served with Majaddarat Bulgur برغل مجدرة\n\n\nWell known in many Syrian villages\, this staple dish of bulgur\, lentils and onions is highly regarded for its nutritional value and health benefits. In Syria\, lentils\, with their high iron content\, are sometimes called the “meat of the poor” ( المجدرة الفقراء لحم )\, or “nails for your knees” (الركب مسمامیر المجدرة ) in the sense that they help keep you on your feet for a long time. SUMMARY:Ramadan Ifthar — Dinner & Music — with Newcomer Kitchen
DESCRIPTION:Ramadan is observed by Muslims worldwide as a month of fasting to commemorate the first revelation of the Quran to Muhammad; an annual event regarded as one of the Five Pillars of Islam. During Ramadan\, fasting begins immediately after the pre-dawn meal of Suhur and continues during the daylight hours\, ending with the evening meal of Ifthar (‘break fast’) at sunset. The spiritual rewards of fasting are also believed to be enhanced during Ramadan\, so this time often includes more prayers\, and an increase of good deeds and charity. \nBut beyond its religious and spiritual significance\, the Ifthar meal is a joyous celebration of family\, friends and — of course — fabulous food! Newcomer Kitchen invites you to join us for a traditional Syrian Ifthar dinner at The Depannuer\, prepared with love by some of our most talented cooks. This intimate evening will also include a performance of traditional Syrian music by Esmaeel Aboufakher and Rahaf Alaakbani. \nWe invite guests to join us at 8pm\, with a short musical programme starting at 8:30. Please keep in mind that no food or drink will be served until sunset (8:57pm)\, at which time dinner will be served. There will be some more music after dinner\, before dessert is served.\n—– \nWater & Dates\nThis is the traditional way to break the fast\, in emulation of the Prophet Muhammad \nShorabit Adas شوربة عدس\nThis yellow lentil soup flavoured with cumin\, onion\, Aleppo pepper\, black pepper and garnished with fresh coriander\, is probably the most popular soup in Syria. It is an essential and traditional dish during Ramadan\, when it is served hot with a slice of lemon. \nKibbeh Maklieh bil Lahmeh كبة مقلية باللحمة\nBulgur wheat\, finely ground halal beef and spices are combined and formed into small football-shaped dumplings to be stuffed with a spiced mixture of ground beef and toasted pine nuts. They are then fried to give them a crispy\, dark auburn exterior. \nFreekeh with Lamb\, Chicken and Nuts فريكة\nFreekeh is made from green durum wheat that processed in a special way to create a unique flavor. The wheat is harvested while the grains are yellow and the seeds still are soft; it then is piled and sun-dried. The piles are carefully set on fire so only the straw and chaff burn\, not the seeds. In these controlled conditions\, the high moisture content of the seeds prevents them from burning\, but imparts them with a unique smoky flavour. Next\, the roasted wheat is threshed and sun-dried before being cracked into smaller pieces so they resemble a green bulgur. This Syrian freekeh recipe is seasoned with onion\, butter\, black pepper\, cinnamon\, and cumin\, topped with tender braised lamb and chicken legs\, and garnished with fried nuts. \nMaldoum ملضوم\nMany versions of Maldoum can be found in Levantine kitchens from Turkey to Lebanon; this is a more rustic\, summery and vegetarian version of the dish. All the sliced vegetables are traditionally arranged in attractive layered patterns in a large shallow round pan before being baked. \nKhyar Belaban خيار بلبن\nYogurt and cucumbers with a touch of garlic is popular combination throughout the Mediterranean\, but the addition of mint makes for an especially delightful\, cool and refreshing summer salad. \nTabbouleh تبولة‎‎\nOriginally from the mountains of Syria and Lebanon\, tabbouleh has become one of the most popular salads in the Middle East. Musakhan is a traditional Palestinian dish that has become very popular in Syria\, especially in the South. Very thin sheets of “taboon” flat bread are filled with cooked chicken\, onions that have been caramelized in olive oil\, and a generous helping of tangy sumac. They are rolled up into small cigars and baked in an oven\, and then dusted with more sumac before serving. \n[Vegetarian] Fattayer S’baneh فطاير سبانخ\nFatayer are a whole category delicious small baked treats that range from open-face\, pizza-like flatbreads to cute little baked turnovers\, with countless different shapes and fillings. Fatayer Sabaneh is a triangular pastry filled with spinach and onions cooked in olive oil\, flavoured with tangy sumac. \nMutabal Batenjan متبل باذنجان\nOne of the most famous and popular Middle Eastern mezze dips — perhaps better known by it’s Egyptian name\, Baba Ganouj — this is a smoky eggplant dip with yogurt\, tahini & garlic. DESCRIPTION:Asora Hindbeh (عصورة هندبة (هندباء\n				\n			\n				\n			\n				\n				Saltah Horania (سلطة حورانية)\n				\n			\n				\n			\n				\n				Mabrosheh bil mrabah مبروشة بالمربى\n				\n		\n\n\n[chicken] Burgul Behommos with Chicken برغل بحمص\n\n\nBurgul (aka bulgur wheat)\, is a dried cracked wheat that is an ancient staple of the Middle and Near East. It is typically made from whole grain durum wheat that has been coarsely ground\, soaked\, steamed and dried\, a process that enhances its shelf life and nutritional profile. Compared to white rice\, bulgur has more fibre and protein\, a lower glycemic index\, and higher levels of most vitamins and minerals.\n\n\nBurgul Behommos is a festive dish which many Syrians take pride in cooking for family gatherings and celebrations. Chicken and chickpeas are boiled with spices and set aside. Then the burgul is cooked in the rich chicken broth\, before being re-combined with the chickpeas and topped with the deboned chicken.\n\n\n \n\n\n[vegetarian] Burgul Behommos برغل بحمص with Asora Hindbeh (عصورة هندبة (هندباء\n\n\nBurgul and chickpeas cooked in a rich vegetable stock\, served with a side of braised dandelion (wild chicory) greens seasoned with garlic\, olive oil and lemon.\n\n\n \n\n\nSaltah Horania سلطة حورانیة\n\n\nHoran is a broad highland plateau in Southwestern Syria that includes the cities of Daraa and Sweida\, and is where this refreshing tomato salad with white and green onions\, garlic\, mint\, olive oil & lemon hails from.\n\n\n \n\n\nMabrosheh bil mrabah مبروشة بالمربى\n\n\nSyrian jam squares; some recipes are nearly universal. So it comes as no surprise that there are countless kebab dishes in India\, nor that Indian culinary ideas have also filtered back through to the Middle East. Kebab Hindi\, or “Indian-Style Kebab”\, is a long-standing traditional Syrian favourite\, even as cooking meat in a tomato and onion-based reduction is a common Indian technique. The meat meal includes 1 beef + 1 cheese fatayer; the vegetarian meal has 1 muhammara + 1 cheese fatayer; all meals come with the delicious musabaha dip\, fattoush salad and the fabulous Syrian rice pudding for dessert. \n[Beef] Sfiha صفيحة\nSfiha is a type of fatayer which is a round-open face baked flatbread topped with spiced halal ground beef\, tomato\, parsley\, onion\, pomegranate molasses and pine nuts. \n[come with both] Fatayer Jibneh فطاير جبنة \nIs different style of fatayer that has little boat shape topped with a mix of cheeses\, parsley and nigella seed brushed with eggs and milk to give a beautiful golden colour. \n[Vegetarian] Fatayer Muhammara فطاير المحمرة\nMuhammara is a spicy red pepper paste originally from Aleppo but found in countless variations throughout the Levant. The villages of Lattakia and Tartous are famous for using it in their fatayer combining it with tomato paste\, onion and olive oil\, and slathering it on rolled rounds of dough with a sprinkling of white & black sesame seeds before baking in ovens. \nMusabaha مسبحة\nA kind of home-style\, deconstructed hummus\, sometimes served warm and also popular for breakfast for brunch\, made with whole chickpeas in a tahini & yogurt sauce\, garlic\, with lemon and olive oil garnished with parsley and Aleppo pepper. \nFattoush فتوش\nFattoush is a popular Levantine bread salad made from toasted or fried pieces of pita bread (khubz arabi) combined with mixed greens\, fresh vegetables like tomatoes\, cucumber and radish\,pepper but vary according to season and region. Fresh mint and parsley lend a freshness and complexity\, and dried sumac (the same staghorn sumac that grows here in Ontario) gives the olive oil-based dressing a distinctive tangy flavour. \nRoz bel Haleeb رز بحليب\nWherever you find rice\, you’ll probably find a version of rice pudding. Small zucchinis or eggplants are perhaps the most common\, but almost any vegetable can be Mahashi (stuffed). Today it’s a combination of colourful peppers (flefleh)\, stuffed with a mix of ground halal beef\, garlic\, mint and rice. The peppers are slow-cooked in rich tomato broth for delicious spring treat. \n[Vegetarian]\nA vegetarian version\, stuffed with a rice mixture spiced with parsley\, mint\, onion\, tomato\, garlic\, and pomegranate syrup. \nIt served with Kobez bil Foren; somewhere between pita and focaccia\, this homemade flatbread is perfect mopping up the delicious sauce and for dipping in the beet hummus. \nMutabal Shmander متبل شمندر\nA traditional beet-based meze dip popular in Syria\, especially in Aleppo. These traditional small fried kibbehs\, little football-shaped fritters of bulgur dough with flavourful stuffings\, together with warm yellow lentil soup is a classic combination. \n[Beef] Kibbeh Maklieh bil Lahmeh  كبة مقلية باللحمة\nBulgur wheat\, finely ground halal beef and spices are combined and formed into small football-shaped dumplings to be stuffed with a spiced mixture of ground beef and toasted pine nuts. They are then fried to give them a crispy\, dark auburn exterior. \n[Vegetarian] Kibbeh Maklieh\nThis is a more unique vegetarian kibbeh with a filling of chopped potato\, mushrooms\, nuts\, spices and pomegranate seeds. \nShorabit Adas شوربة عدس\nThis yellow lentil soup flavoured with cumin\, onion\, Aleppo pepper\, black pepper and garnished with fresh coriander\, is probably the most popular soup in Syria. A classic warm comfort food\, Makhlouta can range from a soup to a thick\, chili-like stew\, with countless different variations and ratios of ingredients. This thick\, hearty version\, popular in and near Lebanon\, is made with broad beans (foul)\, white and red kidney beans\, chickpeas\, lentils\, bulgur\, and rice slow cooked together\, flavoured with onion\, cumin\, Aleppo pepper and black pepper\, garnished with fresh parsley.\n\n\n \n\n\nThis version is topped with awarma\, a type of confit of very small cubes of beef that have been salted and slowly cooked in fat\, allowing it to be preserved for long periods of time. Similar to the tortellini-like dumplings known as manti in neighbouring Turkey\, this traditional dish is popular in both the North and South of Syria. Each city has their distinctive way to make it; this recipe is typical of Damascus. \nA soft dough is made from flour\, salt and water\, and small dumplings are hand-filled with a mixture of cooked onions\, halal ground beef\, “seven spices” (baharat) and black pepper before being baked. A thick\, tangy yogurt sauce is prepared by cooking strained yogurt with starch\, which is then spiced with aromatic fried garlic. The wheat is harvested while the grains are yellow and the seeds still are soft; it then is piled and sun-dried. The piles are carefully set on fire so only the straw and chaff burn\, not the seeds. In these controlled conditions\, the high moisture content of the seeds prevents them from burning\, but imparts them with a unique smoky flavour. Next\, the roasted wheat is threshed and sun-dried before being cracked into smaller pieces so they resemble a green bulgur. This Syrian freekeh recipe is seasoned with onion\, butter\, black pepper\, cinnamon\, and cumin\, topped with a quarter chicken and garnished with fried nuts. \n[vegetarian] Freekeh فريكة\nThe vegetarian version of freekeh is made with chickpeas\, green peas cooked in a vegetable broth. Tabakh Rohoo is one of the most popular dish in Syria and originally comes from Damascus city. Similar to North African tagines or Persian khoresh\, it is redolent with warm spices and sometime enriched with some melted ghee before serving. \nTabakh Rohoo is known as “Cook’s Soul”; whether that’s from the deeply comforting qualities of this kind of “soul food” or if it’s that the long\, slow cooking transforms the humble ingredients into revealing their sublime nature\, is up to you to decide. \nOne legend tells of a princess named Rohoo (“my soul”)\, was such a picky eater that she became ill. Her distraught father\, the king\, called for chefs from across his kingdom to come up with a dish his daughter would eat. DESCRIPTION:Khyar Belaban خيار بلبن\n				\n			\n				\n			\n				\n				Qatayef قطايف\n				\n		\n\n[chicken] Burgul behommos برغل بحمص\nBurgul (aka bulgur wheat)\, is a dried cracked wheat that is an ancient staple of the Middle and Near East. It is typically made from whole grain durum wheat that has been coarsely ground\, soaked\, steamed and dried\, a process that enhances its shelf life and nutritional profile. Compared to white rice\, bulgur has more fiber and protein\, a lower glycemic index\, and higher levels of most vitamins and minerals. \nBurgul Belhommos is very ancient dish in Syria\, and especially well known in the city of Lattakia. It is a festive dish which many Syrians take pride in cooking for family gatherings and celebrations. Chicken and chickpeas are boiled with spices and set aside. Then the burgul is cooked in the rich chicken broth\, before being re-combined with the chickpeas and topped with the deboned chicken. It is traditionally served along with a selection of pickles. \n[vegetarian] Burgul behommos برغل بحمص بالخضار\nBurgul and chickpeas cooked in a vegetable stock\, topped with a generous portion of chickpeas\, green peppers and carrots. \nKeyar bil Laban  خيار باللبن\nIs a traditional middle eastern cucumber salad\, similar to Greek tzatziki\, this combines cool yogurt with garlic and cucumbers\, but the addition of mint makes for an especially delightful\, cool and refreshing salad. \nQatayef قطايف\nQatayef (or Katayef) is kind of sweet filled with ricotta\, clotted cream\, fruit and/or nuts. A yeasted batter is used to make small round pancakes which are are folded into little bundles\, either fresh or deep-fried\, before being drizzled with a honey or sugar syrup. Meals are prepared and packaged\, and then sold online for pickup or delivery to pay for all the ingredients and provide an honorarium for the cooks. \nWe also offer 1 “Guest Cook” spot to help/hang out in the kitchen\, learn the recipes and join the ladies for family meal on Wednesday (10:30-4:30). We are asking for a $50 donation for this\, which will go to topping up the $ we have to share with the cooks. This is available for purchase online\, on a first-come\, first-served basis. \nProceeds from the sale of meals goes directly to the newcomer cooks. However this does not cover the costs of the enormous amount of behind-the-scenes coordination required to keep this project going.
