DESCRIPTION:Majaddarat Bulgur مجدرة برغل\n				\n			\n				\n			\n				\n				Khyar Belaban خيار بلبن\n				\n			\n				\n			\n				\n				Kaak bel Ajweh كعك بالعجوة\n				\n		\n\n[beef] Maldoum ملضوم\nWhen researching this dish\, I found a lovely description of it on the blog of Tony Tahhan\, a Fulbright scholar who has spent time studying the food culture in Aleppo. \n“One thing I learned about Syrian cuisine is that it is resourceful. Recipes were never exact; more like simple instructions that vary between neighbourhoods\, and even families. A series of handfuls and pinches that\, when executed properly\, lead to extraordinary meals. One of the dishes that exemplifies this culinary ingenuity is called maldoum (ملضوم)\, an incredibly delicious layered meat and eggplant dish. The classic way to prepare this dish is over a grill\, where you alternate meat patties and eggplant slices on a skewer. When the dish is prepared over the grill\, it is called\, kabob banjan (كباب باذنجان). But if you don’t have access to a grill\, you can prepare kabob banjan in the oven\, and call it maldoum.” \nMaldoum can be found in kitchens from Turkey to Lebanon; this is a more rustic\, summery version of of the dish\, that take advantage of the lovely local eggplants\, peppers\, zucchini and tomatoes that are in season. All the sliced vegetables are traditionally arranged in attractive layered patterns in a large shallow round pan before baking. \n[vegetarian] Maldoum ملضوم\nThe same dish\, but with more veggies\, no meat\, and a generous splash of olive oil. \nBoth come with a side of Majaddarat Bulgur مجدرة برغل\nWell known in many Syrian villages\, this staple dish of bulgur\, lentils and onions is highly regarded for its nutritional value and health benefits. In Syria\, lentils\, with their high iron content\, are sometimes called the “meat of the poor” ( المجدرة لحم الفقراء); or “nails for your knees” (المجدرة مسمامير الركب) in the sense that they help keep you on your feet for a long time. In majaddarat\, brown lentils are boiled then bulgur is cooked in the broth. While it cooks\, sliced onions are slowly caramelized in olive oil until crispy and then the flavoured oil is added to the lentil-bulgur mix. The finished dish is topped with the fried onions. \nKhyar belaban خيار بلبن\nMuch like tzatziki\, it’s well-known Greek cousin\, this combines cool yogurt with garlic and cucumbers\, but the addition of mint makes for an especially delightful\, cool and refreshing summer salad. \nKaak bel Ajweh كعك بالعجوة\nDelicious\, date-stuffed cookies flavoured with vanilla\, anise\, sesame seeds and mahlab\, a spice derived from cherry kernels that imparts a lovely marzipan aroma. DESCRIPTION:Saltet bakleh سلطة بقلة\n				\n			\n				\n			\n				\n				Barazek  برازق\n				\n		\n\n[chicken] Djaj del Moghrabieh مُغربية\nMoghrabieh\, meaning ”a dish from the Maghreb”\, is a kind of giant couscous – small balls of semolina flour pasta that were traditionally rolled by hand. It is especially popular in Lebanon where it is made with either lamb shanks or chicken – or sometimes both – and served at big family gatherings. The chicken is cooked with onion and spices like caraway\, cumin\, white pepper and cinnamon to create a rich\, flavourful stock\, which is then used to cook the moghrabieh along with chickpeas. \n[vegetarian] Moghrabieh مُغربية\nA version of moghrabieh topped with a mix of vegetables including mushrooms\, carrots and green peppers\, along with the onions and chickpeas. \nSaltet bakleh سلطة بقلة\nA wonderful\, tangy salad using the woefully underappreciated purslane\, along with tomatoes\, mint and pomegranates. Purslane is often considered a common weed in Canada\, but it is uncommonly good for you. It tops the list of plants high in vitamin E and essential omega-3 fatty acid (ALA)\, as well as having six times more vitamin E than spinach and seven times more beta carotene than carrots. It is typically made from whole grain durum wheat that has been coarsely ground\, soaked\, steamed and dried\, a process that enhances its shelf life and nutritional profile. Compared to white rice\, bulgur has more fiber and protein\, a lower glycemic index\, and higher levels of most vitamins and minerals.\nBurgul Behommos is a festive dish which many Syrians take pride in cooking for family gatherings and celebrations. Chicken and chickpeas are boiled with spices and set aside. The small\, young pale green zucchini known as white marrows are the most popular. (In fact\, it has recently re-launched at Butler’s Pantry’s Roncesvalles location). \nIn that time\, many people have expressed interest in learning some of these fabulous recipes\, so for this holiday Monday\, The Dep and Newcomer Kitchen are teaming up to offer a full-day\, hands-on workshop delving into a some of the most popular dishes\, as well as some new ones. The class will cover a number of delicious and traditional Syrian recipes\, and will include a light meze lunch and food to take home. \n— Morning —\nPrepare the dough for the saj bread\, and set it aside to rise. \nJazmaz — a stellar dish of eggs cooked in a delicious tomato sauce and garnished with awarma (optional) — a unique preparation of small cubes of salted halal beef confit — the Syrian answer to bacon bits! \nFoul mokhala — broad beans are a popular breakfast dish throughout the Levant. This Syrian recipe\, features a ground beef and rice filling seasoned generously with parsley\, mint\, onion and black pepper. Some cooks add a bit of finely ground coffee that adds complexity and depth. They are cooked in a tangy sauce of tomato\, lemon\, pomegranate and olive oil\, and served with fresh pita bread. \n[vegetarian] Yalanji (بالنجي)\nYalanji referes to a range of vegetarian dishes stuffed with a seasoned rice filling\, including this version of stuffed grape leaves flecked with green pepper. \nFalafel فلافل\nMost people in Toronto are familiar with falafel\, probably the most universally known Middle Eastern street food as a sandwich in a pita pocket with various toppings. However Syrian falafels are unique in several ways. Larger\, donut-shaped\, and crusted in golden sesame seeds\, these deliciously seasoned chickpea fritters are served as a warm mezze for snacking. \nJazar bil Tahini جزر بطحينة\nA beautiful\, pale orange carrot and tahini dip\, perfect for dipping with the crispy falafel. \nKaak bel Ajweh كعك بالعجوة\nDelicious\, date-stuffed cookies flavoured with vanilla\, anise\, sesame seeds and mahlab\, a spice derived from cherry kernels that imparts a lovely marzipan aroma. Our Newcomer Kitchen project has become something of a local sensation\, serving up 50 meals of traditional Syrian home cooking every week. \nIn that time\, many people have expressed interest in learning some of these fabulous recipes\, so for this holiday Monday\, The Dep and Newcomer Kitchen are teaming up to offer a full-day\, hands-on workshop delving into a some of our most popular Syrian dishes. The class will cover a number of delicious and traditional Syrian recipes\, and will include a light meze lunch and food to take home. \n— Morning —\nKibbeh is one of the most quintessentially Syrian dishes; I’ve been told that there are some 22 different kinds from Damascus alone! In this class we’ll be learning how to make 2 of them: \nKibbeh Lahmeh\nOne of the the most traditional and famous Syrian dishes. Bulgur wheat\, finely ground halal beef and spices are combined and formed into small football-shaped dumplings to be stuffed with a spiced mixture of ground beef and toasted pine nuts. They are then fried to give them a dark auburn and crisp exterior. \nKibbeh Bel Sayniyeh\nThis is a more unique vegetarian kibbeh\, made from two layers of bulgur and potato dough sandwiching a filling of chopped potato\, mushrooms\, nuts\, spices and pomegranate seeds. It is then artfully pre-sliced and decorated with blanched almonds before being baked. \nLUNCH\nYou’ll enjoy a light lunch of your still-warm kibbes along with a selection of Syrian mezzes\, salads and dips\, tea and sweets. \n— Afternoon —\nThe afternoon will focus on baking 2 very delicious Syrian desserts showcasing some of the special ingredients of the region. \nKnafeh Nabulsia\nThis dessert combines knafeh\, a finely shredded wheat pastry\, with a base of mild white cheese (known as Nabulsi\, originally from the Palestinian city of Nablus). It is baked until the pastry is golden and the cheese soft and gooey\, then it is all doused with a scented sugar syrup. This dish is recorded in the Levant as far back as the 10th century\, but the Ottoman Empire spread variations of it to across much of the Middle East. \nKaak bel Ajweh\nDelicious\, date-stuffed cookies flavoured with vanilla\, anise\, sesame seeds and mahlab\, a spice derived from cherry kernels that imparts a lovely marzipan aroma. These cookies are popular in Lebanon around Easter\, where they are known as “Crown” cookies\, their ring shape are thought to evoke Jesus’ crown of thorns. \nThe day will wrap up with an afternoon coffee break and chance to enjoy your freshly-made sweets. \n—– \n$125 +HST \n—–\nNewcomer Kitchen is a new project that invites groups of Syrian refugee women to use our kitchen to cook traditional Syrian dishes in a fun\, social setting. I can be found in most Arab states of the Persian Gulf (where it is also known as makbūs مكبوس‎‎)\, and into Jordan\, Palestine and Southern Syria.\nThese dishes are usually made with a long-grain rice such as basmati\, meat – in our case halal chicken – some finely cut vegetables\, and a mixture of spices\, of which there are countless regional variations\, but might include black pepper\, cloves\, cardamom\, saffron\, cinnamon\, black lime\, bay leaves and nutmeg. It is popular across Egypt\, Palestine\, Lebanon\, Jordan and Southern Syria\, but uncommon further North. This dish is so closely associated with Syrian food that it is also known as shâmiyât (شاميات ) or ‘Damascene’. This recipe\, by Suher J. from Sweida\, is notable for its use of golden\, turmeric-and-spice-infused basmati rice and its garnish of butter-fried walnuts. The dish is built up in layers of bread\, rice\, yogurt & tahini sauce\, chicken\, nuts\, and garnishes. Pale green young zucchinis are very popular\, but almost any vegetable can be Mashi (stuffed). Today it’s a combination of eggplants (batenjan)\, tomatoes (bandoura) and peppers (flefle)\, stuffed with a mix of ground halal beef and rice\, or a spiced rice mixture for a vegetarian option. \nMutabal Batenjan متبل باذنجان\nSyrian home cooking is notable for its economy and minimal waste. The pulp scooped out of the middle of the eggplants when they are cored to make Mahashi is not thrown out\, but rather cooked up and combined with yogurts\, tahini\, garlic & lemon to transform it into a delicious meze dip similar to baba ganoush. DESCRIPTION:[chicken] El Rgaga الرقاقه أو المكامير\nEl Rgaga (aka Al Makameer) is a traditional dish from the countryside around Daraa\, a city in the southwest of Syria near the border with Jordan. When there is a big occasion with many guests\, groups of neighbourhood women get together and make a big batch. Many layers of thinly rolled dough are layered with onions caramelized in olive oil and chicken that has been poached in a spiced broth\, and then baked until golden and crispy on top. (The name translates as “the chip”\, probably referring to the crunchy top layer that absorbs the flavours of the dish). \n[vegetarian]  Harraq Esbaoo حراق اصبعو\nA very old and well-known dish in Syria\, the name translates “burning his finger”. The notion is that the dish is so delicious\, that diners can’t resist going for it before it cools\, so they burn their fingers. DESCRIPTION:Fattoush فتوش\n				\n			\n				\n			\n				\n				Zalabeh زلابية\n				\n		\n\n  \n[chicken] Freekeh فريكة\nFreekeh is made from green durum wheat that processed in a special way to create a unique flavor. The wheat is harvested while the grains are yellow and the seeds still are soft; it then is piled and sun-dried. The piles are carefully set on fire so only the straw and chaff burn\, not the seeds. In these controlled conditions\, the high moisture content of the seeds prevents them from burning\, but imparts them with a unique smoky flavour. Next\, the roasted wheat is threshed and sun-dried before being cracked into smaller pieces so they resemble a green bulgur. This Syrian freekeh recipe is seasoned with onion\, butter\, black pepper\, cinnamon\, and cumin\, topped with a quarter chicken and garnished with fried nuts. \n[vegetarian] Freekeh فريكة\nThe vegetarian version of freekeh is made with green peas\, green onion\, butter-fried nuts\, fresh herbs and lemon\, served more as a warm meze salad\, with a side of cool yogurt. \nFattoush فتوش\nThis popular Levantine salad is made using toasted or fried pieces of pita bread combined with mixed greens\, fresh vegetables like tomatoes\, cucumber and radish\, but vary according to season and region. The dumplings are added to the warm sauce\, and the dish is garnished with fresh parsley\, mint and toasted pine nuts. DESCRIPTION:An all-day\, family-friendly cooking workshop on Family Day! \nin 2016\, The Depanneur reached out to the Syrian newcomer community and has been delighting in the delicious results ever since. Our Newcomer Kitchen project has become something of a local sensation\, serving up 50 meals of traditional Syrian home cooking every week. \nIn that time\, many people have expressed tremendous interest in learning some of these fabulous recipes\, so for this Family Day Monday\, The Dep and Newcomer Kitchen are teaming up to offer a full-day\, hands-on workshop delving into a some of our most popular Syrian dishes. The class will cover a number of delicious and traditional Syrian recipes\, and will include a meze lunch and food to take home. \nBeing Family Day\, you are encouraged to bring children with you\, and kids under 12 are 1/2 price. They can help out in the kitchen and there will also be special cooking activities just for them. \n— Morning —\nMutabal kousa (متبل كوسا )\nSyrian home cooking is notable for its economy and minimal waste. The pulp scooped out of the middle of the zucchinis when they are cored to make Kousa Mahshi is not thrown out\, but rather cooked up and combined with tahini and lemon to transform it into a subtle and delicious meze dip akin to baba ganoush. \nKibbeh bel Senia (كبة بالصينية)\nKibbeh is one of the most quintessential Syrian dishes\, made from a thick dough of bulgur (steamed\, dried and cracked whole wheat). Many types of kibbeh are individually stuffed\, shaped and fried\, which can be very labour intensive\, but this delicious vegetarian kibbeh is stuffed with a combination of walnuts\, potatoes\, onions\, tomatoes and pomegranate seeds\, garnished with pine nuts\, baked in a tray like brownies! \nSalateh Naameh سلطة ناعمة\nThis essential Mediterranean salad can be found throughout the middle east\, with tomatoes\, cucumber\, and white onion are finely diced and seasoned with olive oil\, mint and lemon juice. \nKhabaz Saj (خبز الصاج)\nA simple fresh flatbread\, handmade on the traditional domed oven of the same name. \nLUNCH \n— Afternoon —\nKousa Mahshi كوسا محشي\nStuffed zucchinis were cherished by the former Ottoman Empire\, and they made them popular from the Balkans to the Levant. Most popular are the beautiful\, pale green young marrow or summer squash\, but regular zucchinis work just fine. They are hollowed out with a special implement called a manakra (an apple corer works well in a pinch)\, and stuffed with a mix of ground halal beef and rice\, or a spiced rice mixture for a vegetarian option. \nNamoura (نمُّورة )\nAn classic Syrian dessert\, a rich buttery semolina and yogurt cake\, garnished with almonds and drizzled with a orange-blossom infused syrup.\n—– \n$125 +HST\nKids under 12 are 1/2 price \n—–\nNewcomer Kitchen is a new project that invites groups of Syrian refugee women to use our kitchen to cook traditional Syrian dishes in a fun\, social setting. In Syria\, lentils\, with their high iron content\, are sometimes called the “meat of the poor” ( المجدرة لحم الفقراء); or “nails for your knees” (المجدرة مسمامير الركب) in the sense that they help keep you on your feet for a long time. In majaddarat\, brown lentils are boiled then bulgur is added to the broth; sliced onions slowly caramelized in olive oil\, until crispy and then the flavoured oil is added to the lentil-bulgur mix. The finished dish is topped with the fried onions\, and served with a garnish of fresh vegetables and a selection of pickles. DESCRIPTION:Rez bel Shairieh\n				\n			\n				\n			\n				\n				Salateh Malfouf سلطة ملفوف \n				\n			\n				\n			\n				\n				Nammoura  نموره\n				\n		\n\n[beef] Maldoum ملضوم\nWhen researching this dish\, I found a lovely description of it on the blog of Tony Tahhan\, a Fulbright scholar who has spent time studying the food culture in Aleppo. \n“One thing I learned about Syrian cuisine is that it is resourceful. Recipes were never exact; more like simple instructions that vary between neighbourhoods\, and even families. A series of handfuls and pinches that\, when executed properly\, lead to extraordinary meals. One of the dishes that exemplifies this culinary ingenuity is called maldoum (ملضوم)\, an incredibly delicious layered meat and eggplant dish. The classic way to prepare this dish is over a grill\, where you alternate meat patties and eggplant slices on a skewer. When the dish is prepared over the grill\, it is called\, kabob banjan (كباب باذنجان). But if you don’t have access to a grill\, you can prepare kabob banjan in the oven\, and call it maldoum.” \n\nMaldoum can be found in kitchens from Turkey to Lebanon; this is a more rustic\, countryside version of of the dish\, that adds green peppers\, tomatoes and potatoes\, which are traditionally arranged in attractive layered patterns in a large shallow round pan before baking. It is served with Rez bel Shairieh\, a pilaf of rice and fried vermicelli noodles.\n\n[vegetarian] Maldoum ملضوم\nThe same dish\, but with more veggies\, no meat and a generous splash of olive oil. \nSalateh Malfouf سلطة ملفوف\nA cool\, refreshing salad made of chopped cabbage\, diced tomatoes and pomegranate seeds\, dressed with olive oil\, garlic\, lemon juice\, sumac\, and fresh mint. \nNammoura نموره\nOne of the most well-known traditional Syrian desserts; a simple cake of semolina\, butter\, sugar and yogurt drizzled with simple syrup scented with lemon.
