SUMMARY:NEWCOMER KITCHEN: Fun with Falafel Workshop
DESCRIPTION:Over the last four years\, Newcomer Kitchen has tapped into the tremendous culinary talent in the newcomer Syrian community to create exciting economic and social opportunities. Recently Newcomer Kitchen received funding to do a new “Willing to Work” program in which a diverse group of newcomer women participate in a variety of food-entrepreneurship activities. \nThe women from this program are excited to present their first public workshop: an interactive\, hands-on cooking class called Fun with Falafel. \nIn this workshop you will learn to make crispy golden and delicious chickpea falafel which you will wrap in a warm pita and smother in all of the famous falafel toppings from creamy tahini sauce to tangy\, pickled turnip.  The women will share with you their secret to the perfect falafel dough and demonstrate how to make three different flavours of hummus. \nSave room for dessert because you will have a chance to make baklava from scratch.  No doubt you will be amazed at how easy and delicious it is! \nWe hope you can join us and look forward to cooking with you! \nBOOK NOW

In that time\, many people have expressed interest in learning some of their fabulous recipes. So this December\, in collaboration with Evergreen Brick Works’ Winter Village\, Newcomer Kitchen will be offering 8 fun\, hands-on cooking classes! \n\nHoliday Fatayer Workshop\nCome and share the fun of making savoury Fatayer stuffed flatbreads! These tempting pastries are made with fresh bread dough and filled with three different fillings: Jibneh (cheese & parsley)\, Sabanekh (spinach & onions)\, and Muhummara (a slightly spicy paste of roasted red peppers\, walnuts\, sesame seeds\, pomegranate molasses and Aleppo pepper). Hummous Shmander is a traditional beet-based meze dip popular in Syria\, especially in Aleppo. A colourful relative of hummus\, it’s made with beets\, chickpeas\, tahini and parsley seasoned with a bit garlic\, and garnished with pomegranate molasses\, lemon\, za’atar and walnuts. M’tabbal Koussa is similar to baba ganoush\, this light zucchini-based dip is cool and refreshing\, made with combination of thick yogurt and tahini\, seasoned with a bit garlic\, lemon and cumin. Muhammara is a rich\, complex and slightly spicy dip of roasted red peppers\, tomato\, walnuts\, pomegranate molasses and Aleppo pepper. Originally from Aleppo but can now be found in countless variations throughout the Levant. A fragrant\, smokey rice and tomato filling is rolled into grape leaves and cooked for several hours in a tangy\, lemony sauce. The word Yalanji originates in Turkey and means ‘liar’. The famous Yalanji was associated with the word liar is because the grape leaf hid the fact that there was no meat and only vegetables inside. Women gather together and socialize while they stuff and roll these delightful and beautiful appetizers. \nCheese Fatayer – فطاير الجبنv\nCheese Fatayer are common in the Middle East. Eaten in the morning or evening as a celebration food or a simple snack\, these soft and satisfying little pies can be filled with all sorts of delicious fillings from meat to spinach and cheese. Our version of the Fatayer is filled with two types of cheese – Akawi and Ricotta and enhanced with a mixture of fragrant spices and garnished with a sprinkle of colani and sim sim (sesame seeds). \nMolokhia with Chicken ملوخية الدجاج\nMolokhia is a dish that originated in Egypt and is made with Molokhia leaves\, and chicken. The word Molokhia means ‘for royalty’. The Molokhia leaf is also called Jew’s Mallow\, Jute Mallow or Green Mallow. It can be found frozen and dried in most Middle Eastern Grocery stores. The leaf which is similar to spinach is highly nutritious filled with vitamins B6\, potassium\, iron\, vitamin A and vitamin C and is known to be very good for digestion. When stewed with ghee\, coriander\, garlic and chicken\, it becomes a rich\, hearty\, comforting dish. We hope you like it.”\n\n\n—Seham\, Tsering\, Yega\, Rychen and Silvia\n\n\n \n\n\nMenu\n\n\n \n\n\nSwiss Chard and Syrian Cheese Shabaley with Spicy Apple Chutney\n\n\nSha-bha-ley is one of the most popular and mouth-watering dishes of Tibetan cuisine and the first to go at any traditional gathering. Shabhaley are either deep fried or pan fried. The pan fried version is also called sokpo sha-bhaley. The pastry dough used for Shabaley is thicker than the delicate momo wrapper\, crisp on the outside while slightly airy inside. In Tibet it is common to use Yak meat in the filling since it widely available. However\, here in Canada\, it is usually made from beef or veggies. Here we have filled our Shabhaley with swiss chard\, soybeans and homemade Syrian cheese. Typically Shabaley are dipped in chili sauce but we have paired our Shabaley with a sweet and spicy seasonal apple chutney made with seasonal apples and Indian flavours.\n\n\n \n\n\nChicken Biryani stuffed Ouzi (عزي)\n\n\nThe Syrian Ouzi is a small crispy\, flaky baked parcel made out of thinly rolled phyllo pastry. You will be surprised by a delightfully spicy Indian style Chicken Briyni filling. Fragrant long-grained rice is layered with chicken\, carrots\, peas and cauliflower that have been cooked in a mixture of garlic\, ginger\, chili powder\, mint\, cilantro\, garam masala\, cinnamon\, cardamom and cumin. We have tucked this exotic one-dish meal into a Syrian Ouzi that is delicious served with our tangy Beet and Chickpea salad.\n\n\n \n\n\nVegetable lovers will enjoy an ouzi stuffed with a delicious rice pilaf featuring carrots\, peas\, cauliflower.\n\n\n \n\n\nBeet and Chickpea salad\n\n\nColourful and delicious\, this tangy salad is the perfect accompaniment to any dish. The class will cover a number of delicious and traditional Syrian recipes\, and will include a light meze lunch and food to take home. \n— Morning —\nPrepare the dough for the saj bread\, and set it aside to rise. \nJazmaz — a stellar dish of eggs cooked in a delicious tomato sauce and garnished with awarma (optional) — a unique preparation of small cubes of salted halal beef confit — the Syrian answer to bacon bits! \nFoul mokhala — broad beans are a popular breakfast dish throughout the Levant. DESCRIPTION:Khyar Belaban خيار بلبن\n				\n			\n				\n			\n				\n				Ma’amoul el eid ( معمول العيد )\n				\n			\n		\n\n[chicken] Freekeh w Roz bil D’jaj فريكة و رز بالدجاج\nFreekeh is made from green durum wheat that processed in a special way to create a unique flavor. The wheat is harvested while the grains are yellow and the seeds still are soft; it then is piled and sun-dried. The piles are carefully set on fire so only the straw and chaff burn\, not the seeds. In these controlled conditions\, the high moisture content of the seeds prevents them from burning\, but imparts them with a unique smoky flavour. Next\, the roasted wheat is threshed and sun-dried before being cracked into smaller pieces so they resemble a green bulgur. \nIn this dish\, both rice and freekeh are cooked separately in a chicken stock flavoured with onion\, cloves\, 7 spice (baharat) and bay. It is then layered with freekeh underneath\, then rice\, shredded chicken on the top\, and garnished with fried almonds. \n[vegetarian] Freekeh فريكة\nThe vegetarian version of freekeh is made with chickpeas\, green peas\, and local squash\, flavoured with vegetables stock\, and garnished with fried almonds. \nKeyar bil Laban خيار باللبن\nIs a traditional middle eastern cucumber salad\, similar to Greek tzatziki\, this combines cool yogurt with garlic and cucumbers\, but the addition of mint makes for an especially delightful\, cool and refreshing salad. \nMa’amoul bil tamer معمول بالتمر\nAn ancient Arab dessert\, these delicate pastry cookies are filled with dates. Not only do they pride themselves in food that is steeped in culinary traditions and guard their recipes close to heart\, they undeniably affirm their cuisine as the best in the Middle East. When there is a big occasion with many guests\, groups of neighbourhood women get together and make a big batch. Many layers of thinly rolled dough are layered with chicken that has been poached in a spiced broth\, and onions caramelized in olive oil. This hearty soup is a whole\, warming meal; lentils and chard\, cooked with onions\, garlic and cilantro\, fortified with small cubes of halal lamb (suqaar) and brought to life with a generous splash of lemon. \n[vegetarian]\nThis soup is also delicious (and #vegan & #GF) when made with added potatoes and vegetable stock. \nThe soups come with Kuboz El Samun bel Toum (خبز السمون بالثوم): garlic bread with butter\, lemon\, parsley\, and black pepper. \nYalanji بالنجي\nStuffed grape vine leaves can be found on tables all around the Eastern Mediterranean. This Syrian recipe features a seasoned rice and tomato filling flecked with green pepper. The are cooked in a tangy sauce of tomato\, lemon\, pomegranate and olive oil. \nMushabak مشبك\nA traditional delicious dessert in all over the Middle East\, Mushabak is a spiral shaped fritter that is crunchy on the outside and soft on the inside. The dough is made with flour\, semolina\, yogurt\, milk\, vanilla and cornstarch to give it extra crunch. DESCRIPTION:Rez bel Shairieh\n				\n			\n				\n			\n				\n				Salateh Malfouf سلطة ملفوف\n				\n			\n				\n			\n				\n				Ras el abid bil smead راس العبد بالسميد \n				\n		\n\nAnd we’re back with the first Newcomer Kitchen meal of 2019!\n[Beef] Shishbarak شيش برك\nAlmost every cuisine in the world has their comfort food dumplings\, and Syria is no exception. Similar to the tortellini-like dumplings known as manti in neighbouring Turkey\, this traditional dish is popular in both the North and South of Syria. Each city has their distinctive way to make it; this recipe is typical of Damascus. \nA soft dough is made from flour\, salt and water\, and small dumplings are hand-filled with a mixture of cooked onions\, halal ground beef\, “seven spices” (baharat) and black pepper before being baked. A thick\, tangy yogurt sauce is prepared by cooking strained yogurt with starch\, which is then spiced with aromatic fried garlic. The dumplings are added to the warm sauce\, which is then garnished with fresh coriander and toasted pine nuts\, and served with Rez bel Shairieh (rice with vermicelli). \n[Vegetarian] Shishbarak شيش برك\nThese delicious dumplings are filled with a mix of chickpeas\, onions and walnuts\, spiced with baharat\, an arabic mix of seven spices. The are also served in yogurt sauce alongside Rez bel Shairieh. \nSalateh Malfouf سلطة ملفوف\nA cool\, refreshing salad made of chopped cabbage\, diced tomatoes and pomegranate seeds\, dressed with olive oil\, garlic\, lemon juice\, sumac\, and fresh mint. \nRas el Abid bil Smead راس العبد بالسميد \nIn this traditional sweet popular in Homs city\, semolina is cooked with milk\, cocoa & coconut\, then flavoured with vanilla and orange blossom water. Tonight\, in the spirit of the Holidays\, we are asking our community to pay it forward and give the people who have received so much support from us a chance to give back to others who could use a touch of kindness and holiday cheer. \nThis week we’re collaborating with Building Roots\, a remarkable organization that helped create the Moss Park Market\, a shipping container grocery store near Queen & Sherbourne\, that brings affordable fresh produce into one of Toronto’s most underserved neighbourhoods. \nWe ask that you go ahead and purchase these dinners as you usually would\, but on Dec 19 all the freshly made meals will be brought to the Moss Park Market where volunteers from Newcomer Kitchen and Building Roots will distribute the meals to individuals and families in the Moss Park community. \nFor more than two and half years\, Newcomer Kitchen has been building bridges and creating community through delicious Syrian home cooking. Join us as we invite some special new guests to join us at this bountiful holiday table.\n—– \n[beef] Auzi￼ أوزة\nA decadent and luxurious meat pie from Damascus\, auzy combines a filling of spiced ground beef (halal)\, rice and green peas\, mixed with almonds and pines nuts that have been fried in butter. This filling is wrapped in a delicate\, crispy phyllo pastry shell\, and brushed with butter and eggs that give it a beautiful golden colour when it is baked. They also can be made by hand and ingeniously finished with tongs. \nKa’ak el Eid\nMany kinds of cookies are baked to celebrate Eid\, the festivities at the end of Ramadan\, each family with a recipe of their own. In this dish (roughly translated as “fisherman’s dish”)\, white fish (tilapia) is delicately seasoned with a blend of warm spices (baharat)\, and served atop long grain rice cooked in a flavourful\, rich brown caramelized onion and fish stock. It comes in a range of colours\, from pale yellow to dark brown\, and grinds\, from very fine to coarse. In this classic dish\, bulgur is cooked with tomatoes (bandoura)\, onions and olive oil to give it a rich\, tangy flavour and a moist texture almost approaching a risotto. Today it’s a combination of eggplants (batenjan)\, tomatoes (bandoura) and peppers (flefle)\, stuffed with a mix of ground halal beef and rice\, or a spiced rice mixture for a vegetarian option. \nMutabal Batenjan متبل باذنجان\nSyrian home cooking is notable for its economy and minimal waste. DESCRIPTION:Tabbouleh  تبولة‎‎\n				\n			\n				\n			\n				\n				Qatayef قطايف\n				\n		\n\n[chicken] Freekeh فريكة\nFreekeh is made from green durum wheat that processed in a special way to create a unique flavor. The wheat is harvested while the grains are yellow and the seeds still are soft; it then is piled and sun-dried. The piles are carefully set on fire so only the straw and chaff burn\, not the seeds. In these controlled conditions\, the high moisture content of the seeds prevents them from burning\, but imparts them with a unique smoky flavour. Next\, the roasted wheat is threshed and sun-dried before being cracked into smaller pieces so they resemble a green bulgur. This Syrian freekeh recipe is seasoned with onion\, butter\, black pepper\, cinnamon\, and cumin\, topped with a quarter chicken and garnished with fried nuts. \n[vegetarian] Freekeh فريكة\nThe vegetarian version of freekeh is made with chickpeas\, green peas\, and local squash. \nTabbouleh تبولة‎‎\nOriginally from the mountains of Syria and Lebanon\, tabbouleh has become one of the most popular salads in the Middle East. Musakhan is a traditional Palestinian dish that has become very popular in Syria\, especially in the South. Very thin sheets of taboon flatbread are filled with cooked chicken\, onions that have been caramelized in olive oil\, and a generous helping of tangy sumac. They are rolled up into small cigars and baked in an oven\, and then dusted with more sumac and pomegranate molasses before serving.\n\n\n \n\n\n[vegetarian] Fattayer S’baneh فطاير سبانخ\n\n\nFatayer are a whole category delicious small baked treats that range from open-face\, pizza-like flatbreads to cute little baked turnovers\, with countless different shapes and fillings. So it comes as no surprise that there are countless kebab dishes in India\, nor that Indian culinary ideas have also filtered back through to the Middle East. Kebab Hindi\, or “Indian-Style Kebab”\, is a long-standing traditional Syrian favourite\, even as cooking meat in a tomato and onion-based reduction is a common Indian technique. Join us for delicious family-style Syrian feast incorporating just-picked local produce from Chick-A-Biddy Acres\, a wine list curated by 86 Common Collective\, and live Syrian music performed by our own dear Esmaeel & Rahaf — with proceeds supporting Newcomer Kitchen! \nCheck out pictures or watch the delightful mini-video from our 2016 Harvest Wednesday Dinner at the Gladstone Hotel \n> BOOK HERE\nLabneh — Homemade pressed yogurt cheese\, rolled in cool dried mint\, hot Aleppo pepper\, or nutty crumbled walnuts\, served on endive or radicchio & drizzled with extra virgin olive oil \nFatayer Muhummara — Small baked pastries topped with a spicy and colourful spread of roasted red peppers\, tomato\, walnuts\, aromatic nigella seeds\, and Aleppo pepper. \nKibbeh — Small torpedoes of seasoned bulgur dough mixed with freshly cooked pumpkin then stuffed with a sauteed leeks\, chard and potato filling\, fried to a crispy deep mahogany and served on a bed of shaved watermelon radish. ￼￼ \nMosakett Batinjan bil Lahmeh — Eggplants\, tomatoes and peppers are at the heart of many wonderful Levantine dishes\, and it’s extra special when made with just picked local vegetables from Chick-a-Biddy Acres CSA. A flavourful eggplant stew with tomatoes\, peppers\, cubes of local organic lamb and warm Arabic spices. Also available #vegan with chickpeas. \nMujaddarat — This staple dish of bulgur\, lentils and onions is highly regarded for its nutritional value and health benefits. Brown lentils are boiled then bulgur is added to the broth; sliced onions are slowly caramelized in olive oil until crispy and then the flavoured oil is added to the lentil-bulgur mix. The finished dish is topped with the fried onions\, and served with a garnish of fresh vegetables and a selection of pickles. \n￼Salata Shamander — A colourful beet salad flavoured with a hint of chives and coriander and a generous handful of roughly chopped flat leave parsley. \nKhyer Bil Laban — A creamy and cool cucumber\, mint and yogurt salad ￼￼with a hint of garlic. \nQatayef — These sweet stuffed dumplings are a common sight throughout the Levant during the month of Ramadan. A yeasted batter is used to make small round pancakes which are filled with ricotta cheese and garnished with finely chopped pistachios before being drizzled in sweet rosewater syrup.
