DESCRIPTION:Salateh Jarjeer صلطة جرجير\n				\n			\n				\n			\n				\n				Akras joz el hind bi m’rabah el moshmosh أقراص جوز الهند بمربى المشمش\n				\n			\n		\n\n[chicken] Moghrabieh bil D’jaj   مغربیة بالدجاجُ \nMoghrabieh\, meaning ”a dish from the Maghreb”\, is based on a kind of giant couscous — small balls of semolina flour pasta. While now it is now common to purchase it pre-made\, this week’s cooks Maryam and Mona with be leading the kitchen team and teaching everyone how to make them the traditional way: rolled by hand. \nMoghrabieh is especially popular in Lebanon and Palestine — where it is called Maftoul (rolled). It is made with either lamb shanks or chicken – or sometimes both – and served at big family gatherings like Eid or weddings. The chicken is cooked with onion and spices like\, cumin\, black pepper and cinnamon to create a rich\, chicken stock\, which is then used to cook the moghrabieh along with chickpeas and pearl onions. \n[vegetarian] Moghrabieh\nA version of moghrabieh topped by chickpeas\, pearl onions and potato. \nSalateh Jarjeer صلطة جرجير\nArugula is a widespread the Middle East since it thrives in sandy soils. DESCRIPTION:Khyar Belaban خيار بلبن\n				\n			\n				\n			\n				\n				Ma’amoul el eid ( معمول العيد )\n				\n			\n		\n\n[chicken] Freekeh w Roz bil D’jaj فريكة و رز بالدجاج\nFreekeh is made from green durum wheat that processed in a special way to create a unique flavor. The wheat is harvested while the grains are yellow and the seeds still are soft; it then is piled and sun-dried. The piles are carefully set on fire so only the straw and chaff burn\, not the seeds. In these controlled conditions\, the high moisture content of the seeds prevents them from burning\, but imparts them with a unique smoky flavour. Next\, the roasted wheat is threshed and sun-dried before being cracked into smaller pieces so they resemble a green bulgur. \nIn this dish\, both rice and freekeh are cooked separately in a chicken stock flavoured with onion\, cloves\, 7 spice (baharat) and bay. It is then layered with freekeh underneath\, then rice\, shredded chicken on the top\, and garnished with fried almonds. \n[vegetarian] Freekeh فريكة\nThe vegetarian version of freekeh is made with chickpeas\, green peas\, and local squash\, flavoured with vegetables stock\, and garnished with fried almonds. \nKeyar bil Laban خيار باللبن\nIs a traditional middle eastern cucumber salad\, similar to Greek tzatziki\, this combines cool yogurt with garlic and cucumbers\, but the addition of mint makes for an especially delightful\, cool and refreshing salad. \nMa’amoul bil tamer معمول بالتمر\nAn ancient Arab dessert\, these delicate pastry cookies are filled with dates. Not only do they pride themselves in food that is steeped in culinary traditions and guard their recipes close to heart\, they undeniably affirm their cuisine as the best in the Middle East. As one of the world’s oldest inhabited cities\, Aleppo’s cuisine takes inspiration from the mosaic of cultures that have inhabited Syria over the millennia\, as well as more recent influences of the Ottomans and Armenians. \nTalk to Aleppians about food and they’ll sing a litany of delicacies culminating in one dish unique to their city. DESCRIPTION:Salatet Shmandar سلطة شمندر\n				\n			\n				\n			\n				\n				Barazek برازق\n				\n			\n		\n\n[chicken] El R’gaga الرقاقه أو المكامير\nEl R’gaga (aka Al Makameer) is a traditional dish from the countryside around Daraa\, a city in the southwest of Syria near the border with Jordan. When there is a big occasion with many guests\, groups of neighbourhood women get together and make a big batch. Many layers of thinly rolled dough are layered with chicken that has been poached in a spiced broth\, and onions caramelized in olive oil. DESCRIPTION:Yalanji   يالنجي\n				\n			\n				\n			\n				\n				Khabbaz El Samun bel Toum (خبز السمون بالثوم)\n				\n			\n				\n			\n				\n				Mushabak مشبك \n				\n		\n\n[lamb] Shorbat Silq Bis Adas شوربة سلق بعدس\nLentils have been an essential part of the Levantine winter pantry (mouneh) since biblical times; indeed\, Esau allegedly forfeited his birthright to Jacob for a bowl of lentil soup – one possibly not all that different than the one we are making tonight. This hearty soup is a whole\, warming meal; lentils and chard\, cooked with onions\, garlic and cilantro\, fortified with small cubes of halal lamb (suqaar) and brought to life with a generous splash of lemon. \n[vegetarian]\nThis soup is also delicious (and #vegan & #GF) when made with added potatoes and vegetable stock. \nThe soups come with Kuboz El Samun bel Toum (خبز السمون بالثوم): garlic bread with butter\, lemon\, parsley\, and black pepper. \nYalanji بالنجي\nStuffed grape vine leaves can be found on tables all around the Eastern Mediterranean. This Syrian recipe features a seasoned rice and tomato filling flecked with green pepper. Similar to the tortellini-like dumplings known as manti in neighbouring Turkey\, this traditional dish is popular in both the North and South of Syria. Each city has their distinctive way to make it; this recipe is typical of Damascus. \nA soft dough is made from flour\, salt and water\, and small dumplings are hand-filled with a mixture of cooked onions\, halal ground beef\, “seven spices” (baharat) and black pepper before being baked. A thick\, tangy yogurt sauce is prepared by cooking strained yogurt with starch\, which is then spiced with aromatic fried garlic. The dumplings are added to the warm sauce\, which is then garnished with fresh coriander and toasted pine nuts\, and served with Rez bel Shairieh (rice with vermicelli). \n[Vegetarian] Shishbarak شيش برك\nThese delicious dumplings are filled with a mix of chickpeas\, onions and walnuts\, spiced with baharat\, an arabic mix of seven spices. Tonight\, in the spirit of the Holidays\, we are asking our community to pay it forward and give the people who have received so much support from us a chance to give back to others who could use a touch of kindness and holiday cheer. \nThis week we’re collaborating with Building Roots\, a remarkable organization that helped create the Moss Park Market\, a shipping container grocery store near Queen & Sherbourne\, that brings affordable fresh produce into one of Toronto’s most underserved neighbourhoods. \nWe ask that you go ahead and purchase these dinners as you usually would\, but on Dec 19 all the freshly made meals will be brought to the Moss Park Market where volunteers from Newcomer Kitchen and Building Roots will distribute the meals to individuals and families in the Moss Park community. \nFor more than two and half years\, Newcomer Kitchen has been building bridges and creating community through delicious Syrian home cooking. Join us as we invite some special new guests to join us at this bountiful holiday table.\n—– \n[beef] Auzi￼ أوزة\nA decadent and luxurious meat pie from Damascus\, auzy combines a filling of spiced ground beef (halal)\, rice and green peas\, mixed with almonds and pines nuts that have been fried in butter. This filling is wrapped in a delicate\, crispy phyllo pastry shell\, and brushed with butter and eggs that give it a beautiful golden colour when it is baked. Auzy is often made for wedding celebrations\, family gatherings\, or holidays like Ramadan or Eid. \n[Vegetarian] Auzi\nThe vegetarian version made with rice\, carrots\, green peas and cremini mushrooms\, enriched by butter-fried almonds and pine nuts. \nM’tabbal Kousa متبل كوسا\nA relative of hummus or baba ganoush\, this is cool and refreshing meze dip is made with zucchini\, yogurt\, tahini and mint\, seasoned with olive oil\, and garnished with parsley. \nFattoush فتوش\nFattoush is a popular Levantine salad made with toasted or fried pieces of pita bread combined with mixed greens\, fresh vegetables like tomatoes\, cucumber and radish\, but recipes vary according to season and region. Everywhere from France to Greece to Egypt has their own version of a simple and satisfying meal of roast chicken and potatoes. This popular Syrian recipe features halal chicken quarters roasted with thyme and rosemary along with plenty of garlic\, and a side of local new potatoes roasted with thyme. \n[vegetarian] Yakanett a’arnabeet يخنة قرنبيط\nThe bountiful autumn harvests of Syria and Canada are the inspiration for this traditional light stew of grilled cauliflower\, onions\, and green beens and chickpeas simmered in a sauce of fresh tomatoes and seasoned with cumin and garlic. Served over a bed of fluffy calrose rice and sprinkled with freshly chopped parsley. \nSalatet Alkhus سلطة خس\nA simple green salad of romaine lettuce\, tomatoes\, cucumber and carrots\, with fresh mint and a lemon\, garlic\, olive oil. \nHalaweh bel Jebn حلاوة بالجبن\nSyria is home to a wide variety of cheeses\, some of which make appearances in their delicious desserts. For this dish\, a specialty of Homs\, an outer layer is prepared with semolina\, sugar\, and a stretchy\, chewy Akawi cheese (like a fresh mozzarella). It is then rolled around a cool creamy filling like clotted cream or ricotta. In that time\, many people have expressed interest in learning some of their fabulous recipes. \nSo this December\, in collaboration with Evergreen Brick Works’ Winter Village\, Newcomer Kitchen is offering a fun\, hands-on workshops exploring several traditional Syrian cookies\, typical of what would grace the family table at holiday or gatherings. \nMamoul\nRich\, buttery shortbread cookies stuffed with a date or walnut filling \, often pressed into decorative shapes in carved wooden molds. They also can be made by hand and ingeniously finished with tongs. \nKa’ak el Eid\nMany kinds of cookies are baked to celebrate Eid\, the festivities at the end of Ramadan\, each family with a recipe of their own. These delicious cookies are made with semolina and sesame seeds\, scented with anise and Mahlab\, a spice derived from cherry kernels that adds a marzipan-like almond aroma. \nBarazek \nA crisp\, buttery cookie studded with pistachio pieces and covered in sesame seeds\, barazek are one of the most famous sweets of Damascus\, and a popular gift often brought by people visiting from Syria. \nParticipants will get to enjoy some of their cookies with coffee or tea at the end of the class\, and there will be extras to take home (if you don’t eat them all!). \n$60 +HST \n—–\nNewcomer Kitchen is a project that invites Syrian newcomer women to cook traditional Syrian dishes in a fun\, social setting. In this dish (roughly translated as “fisherman’s dish”)\, white fish (tilapia) is delicately seasoned with a blend of warm spices (baharat)\, and served atop long grain rice cooked in a flavourful\, rich brown caramelized onion and fish stock. Today it’s a combination of eggplants (batenjan)\, tomatoes (bandoura) and peppers (flefle)\, stuffed with a mix of ground halal beef and rice\, or a spiced rice mixture for a vegetarian option. \nMutabal Batenjan متبل باذنجان\nSyrian home cooking is notable for its economy and minimal waste. DESCRIPTION:Tabbouleh  تبولة‎‎\n				\n			\n				\n			\n				\n				Qatayef قطايف\n				\n		\n\n[chicken] Freekeh فريكة\nFreekeh is made from green durum wheat that processed in a special way to create a unique flavor. The wheat is harvested while the grains are yellow and the seeds still are soft; it then is piled and sun-dried. The piles are carefully set on fire so only the straw and chaff burn\, not the seeds. In these controlled conditions\, the high moisture content of the seeds prevents them from burning\, but imparts them with a unique smoky flavour. Next\, the roasted wheat is threshed and sun-dried before being cracked into smaller pieces so they resemble a green bulgur. This Syrian freekeh recipe is seasoned with onion\, butter\, black pepper\, cinnamon\, and cumin\, topped with a quarter chicken and garnished with fried nuts. \n[vegetarian] Freekeh فريكة\nThe vegetarian version of freekeh is made with chickpeas\, green peas\, and local squash. \nTabbouleh تبولة‎‎\nOriginally from the mountains of Syria and Lebanon\, tabbouleh has become one of the most popular salads in the Middle East. A fragrant herb salad\, with parsley and mint\, tomato and onion\, with a scattering of bulgur\, and seasoned with olive oil\, lemon\, and salt. \nQatayef قطايف\nQatayef (or Katayef) is kind of sweet filled with ricotta\, clotted cream\, fruit and/or nuts\, commonly served during the month of Ramadan\, traditionally prepared by street vendors as well as households throughout the Levant and Egypt. Musakhan is a traditional Palestinian dish that has become very popular in Syria\, especially in the South. Very thin sheets of taboon flatbread are filled with cooked chicken\, onions that have been caramelized in olive oil\, and a generous helping of tangy sumac. They are rolled up into small cigars and baked in an oven\, and then dusted with more sumac and pomegranate molasses before serving.\n\n\n \n\n\n[vegetarian] Fattayer S’baneh فطاير سبانخ\n\n\nFatayer are a whole category delicious small baked treats that range from open-face\, pizza-like flatbreads to cute little baked turnovers\, with countless different shapes and fillings. Fatayer Sabaneh is a triangular pastry filled with spinach and onions cooked in olive oil\, flavoured with tangy sumac.\n\n\n \n\n\nMutabal Kousa ( متبل كوسا)\nA delicious meze dip made with fried zucchini\, tahini\, garlic and yogurt\, garnished with parsley and olive oil.\n\n\n \n\n\nMalfouf Salateh سلطة ملفوف \n\n\nA cool\, refreshing salad made of chopped cabbage\, diced tomatoes and pomegranate seeds\, dressed with olive oil\, garlic\, lemon juice\, sumac\, and fresh mint.\n\n\n \n\n\nMabrosheh bil mrabah مبروشة بالمربى\n\n\nSyrian jam squares; some recipes are nearly universal. So it comes as no surprise that there are countless kebab dishes in India\, nor that Indian culinary ideas have also filtered back through to the Middle East. Kebab Hindi\, or “Indian-Style Kebab”\, is a long-standing traditional Syrian favourite\, even as cooking meat in a tomato and onion-based reduction is a common Indian technique. DESCRIPTION:Saltett hindbeh  سلطة هندبة أو هندباء \n				\n			\n				\n			\n				\n				Fatayer al tofah فطاير تفاح \n				\n		\n\n[chicken] Burgul behommos برغل بحمص\nBurgul (aka bulgur wheat)\, is a dried cracked wheat that is an ancient staple of the Middle and Near East. It is typically made from whole grain durum wheat that has been coarsely ground\, soaked\, steamed and dried\, a process that enhances its shelf life and nutritional profile. Compared to white rice\, bulgur has more fiber and protein\, a lower glycemic index\, and higher levels of most vitamins and minerals. \nBurgul behommos is very ancient dish in Syria\, and especially well known in the city of Lattakia. It is a festive dish which many Syrians take pride in cooking for family gatherings and celebrations. Chicken and chickpeas are boiled with spices and set aside. Then the burgul is cooked in the rich chicken broth\, before being re-combined with the chickpeas and topped with the deboned chicken and roasted almonds. DESCRIPTION:Khyar Belaban خيار بلبن\n				\n			\n				\n			\n				\n				Baloza بالوظة\n				\n			\n		\n\n\n[Beef] Damascus-style Molokhia with ground beef ملوخية ع الطريقة الشامية باللحمة \n\n\nMolokhia is dish that goes by many names; I’ve come across at least half a dozen English spellings alone. While a popular dish throughout the Middle East\, it is virtually unknown in North America. It’s based on the leaves of the mallow or jute plant (the same one that produces jute fibre for rope & fabric)\, but known by many other names as well\, including West African sorrel\, bush okra and Jew’s mallow. This plant has been under cultivation in the Levant for millennia\, and was likely on the table of the ancient Egyptians.\n\n\n \n\n\nThe leaves are usually found dried and powdered\, but they are now in season\, so fresh\, green leaves can be used can be used to prepare Molokhia in a style popular in Damascus. It is popular across Egypt\, Palestine\, Lebanon\, Jordan and Southern Syria\, but uncommon further North. This dish is so closely associated with Syrian food that it is also known as shâmiyât (شاميات ) or ‘Damascene’. This recipe\, by Soheer J. from Sweida\, is notable for its use of golden\, turmeric-and-spice-infused basmati rice and its garnish of butter-fried walnuts. The dish is built up in layers of bread\, rice\, yogurt & tahini sauce\, chicken\, nuts\, and garnishes. Tonight we’re making a round kibbeh popular in the coastal region of Lattakia. \n[Meat] Kibbeh Mishwiyeh كبة مشوية\nBulgur wheat\, finely ground halal beef and spices are combined and formed into a round\, domed shape\, stuffed with a spiced mixture of fried onions\, ground beef\, pomegranate molasses and toasted pine nuts. In Lattakia\, these are often grilled over an open fire — the name translates to ‘grilled kibbeh’ — but these can also be brushed with butter and then baked with a piece of charcoal to lend it a smoky flavour. \n[Vegetarian] Kibbeh Mishwiyeh\nThis vegetarian version of Kibbeh Mishwiyeh is made with a bulgur and potato dough\, and a filling of mozzarella cheese and mushrooms. \nBoth Kibbeh come with Salatet El Fijil (سلطة الفجل)\, or “Radish Salad”\, a popular side dish accompaniment\, though it more of a dip like baba ganoush or hummus than a salad. It is made of grated radishes mixed with tahini\, garlic\, yogurt and lemon juice. \nSalatah Horania سلطة حورانية\nNow that local Ontario tomatoes are in season\, it’s the perfect time for this delicious Syrian tomato salad. This class will cover two different styles (there are more than 25!)\, and we will enjoy eating them together with a fresh and flavourful fattoush salad. \nKibbeh Lahmeh\nA classic version of one of the the most traditional and famous Syrian dishes. Bulgur wheat\, finely ground halal beef and spices are combined and formed into small football-shaped dumplings\, stuffed with a spiced mixture of ground beef and toasted pine nuts. They are then fried to give them a dark auburn and crisp exterior. \nKibbeh Bel Sayniyeh (vegetarian)\nThis version of baked “tray” kibbeh is made from two layers of bulgur and squash dough sandwiching a filling of spinach\, walnuts\, mushrooms and pomegranate seeds. The small\, young pale green zucchini known as white marrows are the most popular. DESCRIPTION:Bulgur bel Sharia برغل بالشعرية\n				\n			\n				\n			\n				\n				Salateh Naameh سلطة ناعمة\n				\n			\n				\n			\n				\n				Roz bel Haleeb  رز بحليب\n				\n		\n\n[beef] Maldoum ملضوم\nWhen researching this dish\, I found a lovely description of it on the blog of Tony Tahhan\, a Fulbright scholar who has spent time studying the food culture in Aleppo. \n“One thing I learned about Syrian cuisine is that it is resourceful. Recipes were never exact; more like simple instructions that vary between neighbourhoods\, and even families. A series of handfuls and pinches that\, when executed properly\, lead to extraordinary meals. One of the dishes that exemplifies this culinary ingenuity is called maldoum (ملضوم)\, an incredibly delicious layered meat and eggplant dish. The classic way to prepare this dish is over a grill\, where you alternate meat patties and eggplant slices on a skewer. When the dish is prepared over the grill\, it is called\, kabob banjan (كباب باذنجان). But if you don’t have access to a grill\, you can prepare kabob banjan in the oven\, and call it maldoum.” \nMaldoum can be found in kitchens from Turkey to Lebanon; this is a more rustic\, summary version of of the dish\, that take advantage of the lovely local eggplants\, peppers\, zucchini and tomatoes that are in season. All the sliced vegetables are traditionally arranged in attractive layered patterns in a large shallow round pan before baking. \n[vegetarian] Maldoum ملضوم\nThe same dish\, but with more veggies\, no meat\, and a generous splash of olive oil. \nBoth come with a side of bulgur bel sharia\, bulgur wheat cooked with fried vermicelli \nSalatah Naameh سلطة ناعمة \nThis “fine salad” can be found throughout the middle east\, with tomatoes\, cucumber\, and white onion are finely diced and seasoned with olive oil\, mint and lemon juice. \nRoz bel Haleeb رز بحليب \nWherever you find rice\, you’ll probably find a version of rice pudding.
