DESCRIPTION:Paul DeCampo\, Director of Slow Food Toronto\, will be talking about the principles at the heart of the Slow Food International movement\, a key force in the global transformation of attitudes towards local and sustainable agriculture. \nSlow Food began in Italy in 1986 to resist the opening of a McDonald’s in Rome. By 1989\, the founding manifesto of the international Slow Food movement was signed by delegates from 15 countries. The Slow Food organisation has since expanded to include over 100\,000 members with branches in over 150 countries and 35\,000 members. \nAs a food activist\, educator and marketer\, Paul has worked to inspire a discussion of how we define high quality agriculture. Shakespeare is not usually thought of as a fount of culinary information\, but in fact his plays shed light not only on attitudes toward food in Renaissance England\, but on many of the most pressing issues in our own relationships to food\, including food ethics and security\, vegetarianism\, locavorism\, and the meaning of hospitality. \nDavid Goldstein is a critic\, poet\, food writer\, and Associate Professor at York University in Toronto. His scholarly book\, Eating and Ethics in Shakespeare’s England\, shared the Shakespeare’s Globe Book Award. He’s also co-edited two essay collections\, Culinary Shakespeare and Shakespeare and Hospitality\, and written two books of poetry. Carnitas are a Mexican delicacy – slow-cooked confit pork shoulder that has been pulled and then fried to give it a distinctive combination of tender and crispy. Put them together and you’ve got yourself the makings of one damn fine burrito! \nMy huge burritos come with all the fixin’s: arroz verde (rice seasoned with poblano peppers & cilantro)\, black beans with epazote (a herb that’s the secret to making amazing Mexican beans)\, a bit of tangy guacamole\, cool lime & cilantro crema and fresh pico de gallo (tomato & jalapeño salsa) all wrapped up in a grilled flour tortilla. DESCRIPTION:Not many people can claim to have a breadth of experience that ranges from starting a restaurant to running a print shop to being a partner in an ad agency to animating the world of social innovation\, but Patrick Robinson is one of them. \nCurrently in the Masters program in Strategic Foresight and Innovation at OCAD\, Patrick will be taking a look at the intersection of food & foresight — #Foodsight — a glimpse of the future of food in the sharing economy… (which sounds a lot like The Dep to me!) \nPatrick will be starting his exploration from the question: “How might we be useful\, be inclusive and\, share well to feed our appetite to make the world a better place?” and touch on topics such as: Land Sharing\, Idle Food Redistribution\, Meal Sharing\, Kitchen Space and Equipment Sharing\, Community Supported Food Production and Food Production in Public Spaces.\n \n\n \nOur Table Talks include a seasonal meal prepared by The Depanneur founder Len Senater \nWhat will the future taste like? It’s hard to say\, but I’m going to prepare a meal based on a few important trends I see playing out in food. 1) The move towards more plant-based ingredients. It is now common knowledge that there are many ecological benefits to adopting a more plant-centric diets and eating lower on the food chain – it is much less resource-intensive and\, when grown well\, much more sustainable and even revitalizing for some ecosystems. The challenge is to discover ways to make these meals as delicious and satisfying (and carry equivalent symbolic/social/status value) as the meat-focused diet we have grown up with. This glorious grain\, bean and vegetable bowl is a spectacular assembly of flavours and textures — crispy garlic and sourdough croutons\, earthy kale and umami-packed mushrooms\, toothsome wheat berries and creamy pinto beans — one of those dishes that just happens to be vegan\, but does not call attention to the fact. 2) Exploring non-traditional\, environmentally-friendly protein sources. For those inclined\, the bowl can be garnished with a topping of crumbled C-Fu (aka TIP (Textured Insect Protein))\, an alternative meat protein made from crickets. High in nutrition\, low in cost and ecological footprint\, insects may play an important role in feeding the future. 3) The innovative use of science to improve cooking. I’ll be making a carrot and ginger soup\, but by using a bit of baking soda to adjust the pH\, and a pressure cooker to boost the cooking temperature\, it is possible to accelerate the Maillard (browning) reaction to create a soup with the sweet caramelized flavour of roasted carrots\, but the smooth\, delicate texture of boiled carrots. Science FTW! 4) Supporting local food systems & economies. I’ll make a side of crunchy coleslaw from local\, organic veggies from the Sorauren Farmer’s Market\, and for dessert we’ll have some delicious pie prepared by Leslie Lindsay in the wood oven of nearby Dufferin Grove Park. \n#vegan & #GF options will be available.\n—– \nDoors open at 6pm\, talk starts at 7pm\nincludes dinner and coffee or tea.\n$20 (+HST) \n—–\nPat is a serial-voluntarist\, a conference junkie and an addict of lifelong-learning. DESCRIPTION:The Depanneur is honoured to have local food pioneer Wayne Roberts as our guest for this month’s Table Talk\, speaking about food\, multiculturalism and interculturalism. \nWayne Roberts is a Canadian food policy analyst and writer\, widely respected for his role as one of the founders of the Toronto Food Policy Council\, a citizen body of 30 food activists and experts that is widely recognized for its innovative approach to food security\, from 2000-2010. \nAs a leading member of the City of Toronto’s Environmental Task Force\, he helped develop a number of official plans for the city\, including the Environmental Plan and Food Charter\, adopted by Toronto City Council in 2000 and 2001 respectively. Many ideas and projects of the TFPC are featured in Roberts’ book The No-Nonsense Guide to World Food (2008). \nSince 1989\, Roberts has written a weekly column for Toronto’s NOW Magazine\, generally on themes that link social justice\, public health and green economics\, as well as seven books\, including Get A Life! For those that are unfamiliar\, this holiday of sorts (also known as Bonfire Night) commemorates the foiling of Fawkes’ plot to blow up the British parliament in 1605. Some may be more familiar with the contemporary icon of the Guy Fawkes mask that emerged from the graphic novel and film\, V for Vendetta\, which has since become more or less the logo for the hacktivist group Anonymous. \nFor the main course\, I’ve chosen two British dishes that are quietly revolutionary in their own way: Woolton Pie and Fergus Salad. Woolton Pie introduced to the UK by Lord Woolton at the height of the WWII blockade in an effort to address severe meat shortages. Essentially a root vegetable pot pie\, it sought to encourage the use of plant-based\, local\, seasonal and abundant ingredients (many produced by Women’s Land Army\, another bit of revolutionary wartime policy) at a time when imported good were scarce; a foreshadowing of many contemporary food policy goals. One unexpected result of this government-sponsored vegetarianism was an overall boost in public health. \nFergus Salad\, made with beets\, red cabbage\, red onions and capers\, is named after acclaimed British chef Fergus Henderson\, a leading figure in the renaissance of “nose-to-tail” eating as a response to over-industrialized meat production. DESCRIPTION:Join local food maverick Joshna Maharaj for an discussion about about how we understand our cultural identities through food. The pursuit of “authenticity” in food is elusive at best\, divisive at worst\, and ultimately more of a myth than perhaps we’re willing to admit. \nWhat makes a dish “authentic”? The ethnicity of the cook? The provenance of the ingredients? The techniques of preparation? The age of the recipe? All or none of these things? \nConsider for a moment that tomatoes weren’t in Italy\, potatoes weren’t in Britain and chiles were not in Asia prior to the 1500’s… Many supposedly culturally quintessential foods — sushi in Japan\, baguettes in France\, fish & chips in Britain\, tequila in Mexico\, tandoori chicken in India — have surprisingly short histories\, most less than 200 years old. \nAnd in cosmopolitain places like Toronto\, with no real distinctive culinary tradition of its own\, who is to say who makes the a truly authentic dish? A cook that shares an ethnicity with a dish but has never tasted it in its original context\, or a cook who has spent years travelling and researching a cuisine foreign to their own background? A glimpse into most any restaurant kitchens in this city will reveal a much more diverse\, multicultural mix than what may appear on the menu. \n\nDinner by Len Senater\n\nI chose to make Durban Bunny Chow for a few reasons: a nod to Joshna’s South African-Indian heritage\, because it looks delicious\, and because it touches on so many of the things that make the question of what makes a dish “authentic” interesting and problematic. First off\, let’s just clarify that it does not contain any rabbit: Bunny Chow is a popular South African street food made from a hollowed out loaf of white bread filled with a flavourful curry; a distant comfort-food relative of the Sloppy Joe. \nIt’s roots go back to the 1940’s when it is suggested that the loaf of bread was used as a convenient (and tasty!) way to make staple pulse stews more portable for Indian migrant workers in the sugar cane plantations of Durban. It has long since outgrown its humble\, vegetarian roots to become something of a national dish in South Africa\, with countless variations (mutton being the most popular) and its own slang\, lore and competitions. Hell\, I’ve even seen Instagrams of dainty little gourmet Bunny Chow canapés in toasted brioche cubes garnished with micro greens. \nNow here’s where it gets interesting: in what ways can this dish even begin to be considered “authentic”? On the one hand\, it is specific to a particular place\, and the unique cultural influences and history found there. But a loaf of white bread is pretty far removed from either traditional Indian or African cuisines. Even the notion of “curry” itself is a bit of an artificial\, post-colonial construct\, a convenience to package up a complex culinary tradition into a simple\, exportable product: curry powder\, itself made up of many ingredients from neither India nor Africa\, but the result of centuries of global trade in spices. Add to that the fact that chili peppers\, tomatoes or potatoes would have not even existed outside of the Americas prior to 1500. \nNow multiply all of this by the fact that I — a Montreal-born Romanian Jew — am attempting to make Bunny Chow having never visited South Africa\, or even having ever tasted it before\, based entirely on internet research\, culinary instinct\, and local produce. (That said\, I will try and head up to the South African store in Wilson Heights for some spices and hot sauce). Will this meal somehow\, despite all this\, still be recognizable as an “authentic” South African dish\, to be savoured nostalgically by an expat or as an exotic novelty by a curious foodie? DESCRIPTION:Margret will be talking about her new ebook project: Frutas y Verduras – an interactive guide to the fresh taste of Mexico\, that explores the many unique fruits\, vegetables\, herbs and spices that can be found in Mexican markets and tianguis. \nThe importance of Mexican foods cannot be overstated. Mexican cuisine has been designated a UNESCO World Cultural Treasure. A deeper understanding of regional and local food gives us richer connection to a place and its culture\, and to those who grow\, forage\, harvest and sell it. Eating indigenous foods not only helps support the local community behind it\, it ultimately preserves the taste of Mexico\, its biodiversity and sustainable agricultural practices. \n—-\nMargret Heffner studied at the Rhode Island School of Design leading to a BFA in Jewelry Design. This I did for about 15 years\, but the tools of the kitchen and a love of serving good food (thanks to my Polish dad) always called me. Eventually\, afters years in-and-out restaurant kitchens\, I turned to cooking for private clients\, with a focus on nurturing with food and helping clients improve their health by gently influencing them to eat fresh\, local\, sustainable… in general\, more plant foods\, less meat. \nIn Mexico\, my work has been ideal for discovering ingredients I have never tasted or cooked with before. The wealth of regional ingredients\, particularly those that are indigenous is staggering.
