SUMMARY:TABLE TALK: Chef Francoise Briet on Nutrition and Healing
DESCRIPTION:What is nutrition? We all intuitively know that our health and well-being is intimately connected to what we eat\, but how much do we truly understand about how and why food affects us? Consumers and the food industry alike are eager for simple\, ‘silver bullet’ solutions\, but reality is more complicated. With so much competing\, often conflicting information out there\, it can be challenging to understand how to make the right food choices. Chef Francoise Briet brings three unique perspectives to the intersection of food and health: her technical background as a research scientist in metabolic nutrition\, her culinary expertise as Chef at the French Consulate\, and her own personal journey of healing through diet. \nDinner by Len Senater\nThis meal is inspired by the bounty of the late summer vegetable harvest\, a plant-centric Mediterranean menu from the South of France. \nWatermelon Salad with Feta and Mint • Grilled Vegetable Ratatouille with Basil Gremolata and Crispy Socca (a thin chickpea flour & olive oil polenta popular around Nice)\, garnished with fennel sausage or grilled portobello • Stone fruit compote with coconut custard & aquafaba meringue \n#GF #vegan options available \n—–\nDoors open at 6pm\, talk starts at 7pm\nIncludes dinner and coffee or tea.\n$35 (includes HST) \nBOOK NOW\n—–\nFrancoise Briet is the Chef of the General Consulate of France in Toronto\, and the owner of Malty and Hoppy Delicacy\, a company that uses Ontario craft beer in small-batch artisan jellies\, jams and other delicacies. Before that\, Francoise was a clinical research scientist in the field of metabolic nutrition. Over the past two years\, Francoise personally experienced the impact of trauma and illness\, so she turned to her understanding of metabolic nutrition to help support her recovery. This experience had a transformative impact on her wellbeing\, and has helped her develop a more health-conscious approach to food. \n—–\nThis Table Talk is presented in collaboration with Artery\nEvery space is a stage. DESCRIPTION:Voyage to the Anthropocene: rocking the future of food. \nThe Holocene is giving way to the Anthropocene\, the epoch of humans. What this means is that humankind is now the most impactful geological force on the planet. It will be official once geologists agree a start date and markers. 1950 is among the candidates for the start date; and you may be surprised to learn about some of the candidates for the “golden spike” or chief marker of the epoch. \nIn this discussion\, I raise topics we are exploring in our upcoming Future Food Salon Series: Voyage to Anthropocene\, among them\, the relationship between food and the planet’s geological record\, the strata of rock that will tell the story of humankind’s impact\, plastics and packaging\, dinner on Mars\, novel ways to tackle food distribution problems\, and thorny knots of opportunity for intrepid entrepreneurs. There may be surprises\, which I cannot yet reveal\, because surprises.\n—–\nDinner by Len Senater\nTonight I’m exploring what could/should/might we be eating in the Anthropocene? Menus\, compositions\, inventions and installations form the content of the Salons and the public is invited to join in the fun. The Salons have toured Toronto\, Montreal\, New York and Austin. The first two series focused on edible insects. Voyage to Anthropocene\, the coming series\, features fungi with algae and bugs playing support. \nIn addition to the Salons\, Voyage to Anthropocene offers classroom size workshops and an assembly performance for schools interested in themes of the future of food. Aruna performs with the Sirens\, and the ensemble\, Artists of the Aurora\, which performed her piece Have You Seen My Sister? a song cycle memorial to missing and murdered women\, as part of the official program of independent projects of Nuit Blanche 2017. SUMMARY:TABLE TALK: Paul DeCampo
DESCRIPTION:Paul DeCampo\, Director of Slow Food Toronto\, will be talking about the principles at the heart of the Slow Food International movement\, a key force in the global transformation of attitudes towards local and sustainable agriculture. \nSlow Food began in Italy in 1986 to resist the opening of a McDonald’s in Rome. By 1989\, the founding manifesto of the international Slow Food movement was signed by delegates from 15 countries. The Slow Food organisation has since expanded to include over 100\,000 members with branches in over 150 countries and 35\,000 members. \nAs a food activist\, educator and marketer\, Paul has worked to inspire a discussion of how we define high quality agriculture. Slow Food has been central to this effort\, with its intersection of defending cultural traditions\, sustainability and social justice.\n—– \nTable Talks include a seasonal meal prepared by The Depanneur founder Len Senater. \n \nI’ll be making a locally-sourced\, organic\, seasonal\, scratch-made Slow Food-inspired menu — in December in Ontario! — starting with a Carrot & Squash Soup with Evelyn’s Red Fife Crackers\, followed by Kapusta\, a Polish sauerkraut (homemade!) and mushroom stew\, served with potatoes\, beet salad\, and an optional garnish of locally-made sausage\, with some fab Ontario sourdough from my neighbours at Prairie Boy Bakery. Finish with market fruit pies baked in the wood ovens of Dufferin Grove Park. \n#vegetarian\, #vegan and/or #glutenfree options will be available. \n—–\nDoors open at 6pm\, talk starts at 7pm\n$20 (+HST) — includes dinner \n—–\nEvery month The Depanneur invites a local food personality to talk about something that interests them while Dep founder Len Senater cooks dinner for everyone. \nFind out more on Table Talks at The Depanneur

SUMMARY:TABLE TALK: David B. Goldstein
DESCRIPTION:Shakespeare for Foodies!\nShakespeare teaches us about good and evil\, the power of language\, the nature of love — but can he teach us how to eat? Shakespeare is not usually thought of as a fount of culinary information\, but in fact his plays shed light not only on attitudes toward food in Renaissance England\, but on many of the most pressing issues in our own relationships to food\, including food ethics and security\, vegetarianism\, locavorism\, and the meaning of hospitality. \nDavid Goldstein is a critic\, poet\, food writer\, and Associate Professor at York University in Toronto. His scholarly book\, Eating and Ethics in Shakespeare’s England\, shared the Shakespeare’s Globe Book Award. He’s also co-edited two essay collections\, Culinary Shakespeare and Shakespeare and Hospitality\, and written two books of poetry. A former food magazine editor and restaurant critic\, he loves to think about how old books can help us think about food in new ways. \n—–\nTable Talks include a seasonal meal prepared by The Depanneur founder Len Senater. \nA foray into Elizabethan recipes\, this one based on one from “The English Huswife” (1596) is typical of dishes of the period\, combining meat with fruit and aromatic spices like cinnamon\, mace and rosewater: Chicken & Prune Tudor Pie (also available #vegan with root veg)\, with a Winter Salad of savoy cabbage\, beets\, olives\, lemons and a raisin & caper vinaigrette\, and Baked Apples with cinnamon “stems” from “Shakespeare’s Kitchen” (2003) by Francine Segan.

She is the founder of Scout Canning and Events\, offering a range of small-batch artisanal canned goods\, and the animating force behind a slew of fabulous food events from pop-up oyster bars to Farm-to-Table Dinners parties. Known for her combination of East Coast hospitality and sassy personality\, Charlotte brings more than a decade of food passion to the table. \nCharlotte will be diving into some of her favourite topics: traceability\, seafood\, canning and the exciting tension between traditional vs non-traditional things\, be they recipes or restaurants.\n—– \nTable Talks include a seasonal meal prepared by The Depanneur founder Len Senater. \n \nAs the weather has taken on the first hint of chill\, but all the lovely late summer veg are still available\, I’ll be making a warm Soupe au Pistou; Southern France’s lighter version of minestrone topped with a fresh basil pesto direct from The Dep garden.\nAnd since we’re talking about canned fish\, and to keep the Provençal vibe going\, I’ll make one of my favourite summer meals — Salade Niçoise. The Niçoise is a classic combination of Provençal flavours: briny olives & meaty tuna (or chickpeas and artichoke hearts for the vegetarians)\, creamy new potatoes & eggs\, bright green beans and juicy tomatoes\, tangy vinaigrette and lots of fresh herbs from our garden\, all on a bed of baby greens. Served with a wedge of grilled baguette. \n#vegetarian\, #vegan and/or #glutenfree options will be available.\n—– \nFresh seasonal fruit pie\, baked by Leslie Lindsay in the wood ovens at Dufferin Grove Park will be available for dessert. $5\nAdd vanilla ice cream +$2 \nDoors open at 6pm\, talk starts at 7pm\n$20 (+HST) — includes dinner \n—–\nEvery month The Depanneur invites a local food personality to talk about something that interests them while Dep founder Len Senater cooks dinner for everyone. \nFind out more on Table Talks at The Depanneur

SUMMARY:TABLE TALK: Michael Sacco
DESCRIPTION:Michael Sacco is the founder of ChocoSol\, an artisanal chocolate company\, learning community and social enterprise promoting organic cacao production and indigenous knowledge through horizontal trade and direct collaboration with the growers. Through chocolate\, Micheal extends a symbolic invitation for dignity\, creativity and learning. \nMichael will be talking about the roots of Meso-American permacultures: the 3 Sisters of the field garden (corn\, beans & squash)\, evolving into the 3 pillars of the forest garden (cacao\, vanilla\, achiote) as the basis of ChocoSol’s eco-gastronomy\, and as an opportunity to sustainably regenerate fields by returning to forests and poly-culture. \n—–\nTable Talks include a seasonal meal prepared by The Depanneur founder Len Senater; \n \nThis menu will be a cross-country mashup of Mexican flavours – cochinita pibil from Yucatan\, carnitas from central Michoacán and burritos from the Tex-Mex North. \nPibil is a pre-Colombian\, Yucatecan-style recipe where pork is seasoned with citrus and achiote paste\, whose annatto seeds give it its characteristic red colour. Carnitas are a Mexican delicacy – slow-cooked confit pork shoulder that has been pulled and then fried to give it a distinctive combination of tender and crispy. Put them together and you’ve got yourself the makings of one damn fine burrito! \nMy huge burritos come with all the fixin’s: arroz verde (rice seasoned with poblano peppers & cilantro)\, black beans with epazote (a herb that’s the secret to making amazing Mexican beans)\, a bit of tangy guacamole\, cool lime & cilantro crema and fresh pico de gallo (tomato & jalapeño salsa) all wrapped up in a grilled flour tortilla. Served with tortilla chips and pico de gallo on the side. \nAlso available #vegetarian/ #vegan with a 3-sisters saute\, and/or #glutenfree as tacos on corn tortillas. \nA dessert featuring ChocoSol’s remarkable chocolate & vanilla is also in the works. SUMMARY:TABLE TALK: Patrick Robinson
DESCRIPTION:Not many people can claim to have a breadth of experience that ranges from starting a restaurant to running a print shop to being a partner in an ad agency to animating the world of social innovation\, but Patrick Robinson is one of them. \nCurrently in the Masters program in Strategic Foresight and Innovation at OCAD\, Patrick will be taking a look at the intersection of food & foresight — #Foodsight — a glimpse of the future of food in the sharing economy… (which sounds a lot like The Dep to me!) \nPatrick will be starting his exploration from the question: “How might we be useful\, be inclusive and\, share well to feed our appetite to make the world a better place?” and touch on topics such as: Land Sharing\, Idle Food Redistribution\, Meal Sharing\, Kitchen Space and Equipment Sharing\, Community Supported Food Production and Food Production in Public Spaces.\n \n\n \nOur Table Talks include a seasonal meal prepared by The Depanneur founder Len Senater \nWhat will the future taste like? It’s hard to say\, but I’m going to prepare a meal based on a few important trends I see playing out in food. 1) The move towards more plant-based ingredients. It is now common knowledge that there are many ecological benefits to adopting a more plant-centric diets and eating lower on the food chain – it is much less resource-intensive and\, when grown well\, much more sustainable and even revitalizing for some ecosystems. The challenge is to discover ways to make these meals as delicious and satisfying (and carry equivalent symbolic/social/status value) as the meat-focused diet we have grown up with. This glorious grain\, bean and vegetable bowl is a spectacular assembly of flavours and textures — crispy garlic and sourdough croutons\, earthy kale and umami-packed mushrooms\, toothsome wheat berries and creamy pinto beans — one of those dishes that just happens to be vegan\, but does not call attention to the fact. 2) Exploring non-traditional\, environmentally-friendly protein sources. For those inclined\, the bowl can be garnished with a topping of crumbled C-Fu (aka TIP (Textured Insect Protein))\, an alternative meat protein made from crickets. High in nutrition\, low in cost and ecological footprint\, insects may play an important role in feeding the future. 3) The innovative use of science to improve cooking. I’ll be making a carrot and ginger soup\, but by using a bit of baking soda to adjust the pH\, and a pressure cooker to boost the cooking temperature\, it is possible to accelerate the Maillard (browning) reaction to create a soup with the sweet caramelized flavour of roasted carrots\, but the smooth\, delicate texture of boiled carrots. Science FTW! 4) Supporting local food systems & economies. I’ll make a side of crunchy coleslaw from local\, organic veggies from the Sorauren Farmer’s Market\, and for dessert we’ll have some delicious pie prepared by Leslie Lindsay in the wood oven of nearby Dufferin Grove Park. \n#vegan & #GF options will be available.\n—– \nDoors open at 6pm\, talk starts at 7pm\nincludes dinner and coffee or tea.\n$20 (+HST) \n—–\nPat is a serial-voluntarist\, a conference junkie and an addict of lifelong-learning. Pat co-founded Le Petit Dejeuner – just doors down from the first Starbucks in Toronto. \nAs a social-minded design thinker\, Pat plays an evolving role in communities working to elevate and activate a betterment agenda. To this end\, he is an active member of the: Registered Graphic Design Association\, Association of Professional Futurists\, the World Future Society and the Long Now Foundation. \n—–\nEvery month The Depanneur invites a local food personality to talk about something that interests them while Dep founder Len Senater cooks dinner for everyone. \nFind out more on Table Talks at The Depanneur

SUMMARY:TABLE TALK: Tonya Surman — The Revolution starts in the Kitchen
DESCRIPTION:Tonya Surman is one of Canada’s leading social entrepreneurs\, forging visionary ideas that inspire\, models that harness collaboration\, and spaces that accelerate systemic change. \nTonight’s talk — Revolution starts in the Kitchen — will look at the power of food for social change. Food is one of the most universal and fundamental human experiences\, one that touches almost every aspect of our lives and culture\, so changing our relationship to food can have a powerful impact on nearly all facets of our society. \nThis resonates closely to the spirit of The Depanneur\, which has always sought to explore new models for food in the city. The Dep is an ongoing exploration into how we can lower barriers to entry\, increase diverstity and participation\, create economic opportunity\, support social justice and build community through food.\n—– \nDinner by Len Senater \n“Remember\, remember\, the 5th of November\nThe Gunpowder Treason and plot;\nI know of no reason why Gunpowder Treason\nShould ever be forgot”\n— Traditional Guy Fawkes Night rhyme \nWith the theme of revolution in November\, I’ve put together a UK-inspired fall menu in celebration of Guy Fawkes Night (Nov. 5). For those that are unfamiliar\, this holiday of sorts (also known as Bonfire Night) commemorates the foiling of Fawkes’ plot to blow up the British parliament in 1605. Some may be more familiar with the contemporary icon of the Guy Fawkes mask that emerged from the graphic novel and film\, V for Vendetta\, which has since become more or less the logo for the hacktivist group Anonymous. \nFor the main course\, I’ve chosen two British dishes that are quietly revolutionary in their own way: Woolton Pie and Fergus Salad. Woolton Pie introduced to the UK by Lord Woolton at the height of the WWII blockade in an effort to address severe meat shortages. Essentially a root vegetable pot pie\, it sought to encourage the use of plant-based\, local\, seasonal and abundant ingredients (many produced by Women’s Land Army\, another bit of revolutionary wartime policy) at a time when imported good were scarce; a foreshadowing of many contemporary food policy goals. One unexpected result of this government-sponsored vegetarianism was an overall boost in public health. \nFergus Salad\, made with beets\, red cabbage\, red onions and capers\, is named after acclaimed British chef Fergus Henderson\, a leading figure in the renaissance of “nose-to-tail” eating as a response to over-industrialized meat production. SUMMARY:TABLE TALK: Abeda Oturkar
DESCRIPTION:A veteran food entrepreneur and food historian\, Abeda will be talking about legacy of the spice trade and its influence on culinary history. \n“Spice — the very word conjures up visions of exotic places and tastes. For a very long time spices were rare and exotic\, sought in far-flung parts of Asia\, Africa\, and South America for their culinary and medicinal value. Today in North America — a place itself discovered in the quest for spices — we now have all the flavours of the world at our fingertips. I am forever fascinated by the intricate and interwoven stories of these culinary treasures and their journeys that connect so many cultures. Our collective love affair with spices continues to tie us all together.”\n— Abeda Oturkar \n—–\n\nDinner by Len Senater\nTonight I’ll be making a personal favourite: Gado Gado\, whose fresh + spicy\, cool + warm combinations are perfect for a summer dinner\, and because Indonesian cuisine is so wrapped up in the history of the spice trade. This dish features cool fresh vegetables like cucumbers\, tomatoes and bean sprouts\, with warm\, cooked veggies like long beans\, blanched cabbage and turmeric-tinted potatoes\, blanketed in a rich\, spicy-sweet peanut sauce\, and garnished with tofu cubes\, hard boiled eggs (optional)\, crispy shallots and prawn crackers. On the side\, I’ll be serving a bit of tangy-spicy Acar Awak\, a Nonya/Malay pickle-cum-chutney.\n#GF #vegetarian #vegan options available \nFor dessert\, another legacy of the global spice trade: Speculaas ice cream! Speculaas is a type of heavily spiced shortcrust biscuit\, akin to a gingerbread\, traditionally made in the Netherlands. The Dutch\, whose colonization of Indonesia for its spices via The Dutch East India Company\, transformed the world in many ways—the first multinational corporation\, the first company to issue stock\, and was the first megacorporation\, possessing quasi-governmental powers\, including the ability to wage war\, negotiate treaties\, coin money\, and establish colonial settlements.\n$5 \n—– \nDoors open at 6pm\, talk starts at 7pm\nincludes dinner and coffee or tea.\n$20 (+HST) \n—–\nAbeda Oturkar is a veteran food entrepreneur who is equally passionate about preparing delectable recipes and providing foods that improve well-being. Over more than 11 years her Dubai-based food business\, Spice & Aroma\, grew to encompass a successful restaurant\, catering business\, cooking classes\, consulting and culinary tours. All of Abeda’s endeavours are informed by a lifelong study of food\, culinary history\, spices and nutrition. She’s now looking to bring this culinary adventure to Ontario. \n—–\nLen Senater is the founder and proprietor of The Depanneur\, who happily cooks for his friends and neighbours. \n—–\nDepanneur invites a local food personality to talk about something that interests them while Dep founder Len Senater cooks dinner for everyone. \nFind out more on Table Talks at The Depanneur\nhttp://staging.thedepanneur.ca/drop-in-dinners/table-talk/

SUMMARY:TABLE TALK: Joshna Maharaj
DESCRIPTION:Join local food maverick Joshna Maharaj for an discussion about about how we understand our cultural identities through food. The pursuit of “authenticity” in food is elusive at best\, divisive at worst\, and ultimately more of a myth than perhaps we’re willing to admit. \nWhat makes a dish “authentic”? The ethnicity of the cook? The provenance of the ingredients? The techniques of preparation? The age of the recipe? All or none of these things? \nConsider for a moment that tomatoes weren’t in Italy\, potatoes weren’t in Britain and chiles were not in Asia prior to the 1500’s… Many supposedly culturally quintessential foods — sushi in Japan\, baguettes in France\, fish & chips in Britain\, tequila in Mexico\, tandoori chicken in India — have surprisingly short histories\, most less than 200 years old. \nAnd in cosmopolitain places like Toronto\, with no real distinctive culinary tradition of its own\, who is to say who makes the a truly authentic dish? A cook that shares an ethnicity with a dish but has never tasted it in its original context\, or a cook who has spent years travelling and researching a cuisine foreign to their own background? A glimpse into most any restaurant kitchens in this city will reveal a much more diverse\, multicultural mix than what may appear on the menu. \n\nDinner by Len Senater\n\nI chose to make Durban Bunny Chow for a few reasons: a nod to Joshna’s South African-Indian heritage\, because it looks delicious\, and because it touches on so many of the things that make the question of what makes a dish “authentic” interesting and problematic. First off\, let’s just clarify that it does not contain any rabbit: Bunny Chow is a popular South African street food made from a hollowed out loaf of white bread filled with a flavourful curry; a distant comfort-food relative of the Sloppy Joe. \nIt’s roots go back to the 1940’s when it is suggested that the loaf of bread was used as a convenient (and tasty!) way to make staple pulse stews more portable for Indian migrant workers in the sugar cane plantations of Durban. It has long since outgrown its humble\, vegetarian roots to become something of a national dish in South Africa\, with countless variations (mutton being the most popular) and its own slang\, lore and competitions. Hell\, I’ve even seen Instagrams of dainty little gourmet Bunny Chow canapés in toasted brioche cubes garnished with micro greens. \nNow here’s where it gets interesting: in what ways can this dish even begin to be considered “authentic”? On the one hand\, it is specific to a particular place\, and the unique cultural influences and history found there. But a loaf of white bread is pretty far removed from either traditional Indian or African cuisines. Even the notion of “curry” itself is a bit of an artificial\, post-colonial construct\, a convenience to package up a complex culinary tradition into a simple\, exportable product: curry powder\, itself made up of many ingredients from neither India nor Africa\, but the result of centuries of global trade in spices. Add to that the fact that chili peppers\, tomatoes or potatoes would have not even existed outside of the Americas prior to 1500. \nNow multiply all of this by the fact that I — a Montreal-born Romanian Jew — am attempting to make Bunny Chow having never visited South Africa\, or even having ever tasted it before\, based entirely on internet research\, culinary instinct\, and local produce. (That said\, I will try and head up to the South African store in Wilson Heights for some spices and hot sauce). Will this meal somehow\, despite all this\, still be recognizable as an “authentic” South African dish\, to be savoured nostalgically by an expat or as an exotic novelty by a curious foodie? I guess you’ll have to come down and try it to find out.\n \nAuthentically #vegan & #GF options will also be available 😉\n —– \nDoors open at 6pm\, talk starts at 7pm\nincludes dinner and coffee or tea.\n$20 (+HST) \n—-\nJoshna Maharaj is a busy chef with big ideas about good food! DESCRIPTION:Ruth Klahsen is living proof of how an individual can have a transformative effect on local food systems. After 25 years as a professional chef\, she embarked on an adventure that would see her become one of Canada’s most celebrated cheesemakers. Through innovative use of Community Shared Agriculture (CSA) fundraising\, Ruth established Monforte Dairy as an innovative and award-winningly delicious model of microproduction\, sustainable farming and just food. \nBut behind the many rewarding successes and daunting challenges faced along the way lies a fundamental question: “Why even bother with local food?” As small businesses feel the squeeze from corporate food giants\, and regulations such as the recent European Trade Agreement and Trans Pacific Partnership (TPP) continue to ignore the true costs of farming\, the answers to this question become more important than ever.\n—– \nDinner by Len Senater\nSpring risotto with Ontario asparagus\, sweet baby peas and edamame\, with choice of crispy pancetta or broiled shiitake mushrooms\, with Monforte Water Buffalo Fontina with Fenugreek.
