He has spent the better part of the last 5 years living in Mexico and immersing himself in the country’s rich culinary tradition first-hand. \nJoin Greg for a fun\, hands-on workshop as he debuts new recipes inspired by his Mexican adventures. This class will explore the incredible variety and versatility of Mexican chiles – fresh\, dried and smoked\, from mild to fiery. \n—–\nPico de Gallo – a bright fresh salsa that’s quick and easy to make\, using sweet\, serrano and jalapeño peppers\, and served with crisp corn tortilla chips \nEnchiladas Verde con Pollo – a classic Mexican dish with   twist. Leo lovingly recreates this robust\, intriguing dish in which fresh noodles are tossed in a soy\, sesame and home-made chili oil sauce\, topped generously with spicy ground beef and Sichuanese pickles and garnished with herbaceous Sichuan pepper and green onion. Home-style stir-fried Chinese greens and tea will be served with the dish. Tart\, refreshing smacked cucumber salad will be available. Vegan option available too! \nDan Dan noodles\, Chinese greens and tea – $12\nCucumber salad – $4 \nLeo Moncel is a professional cook who has honed his craft at The Stockyards Smokehouse and Larder for the last two years. Dinner is your choice of Sarme (Cabbage Rolls) and/or Filovana Paprika (Stuffed Peppers) served with Maslenica (Homemade bread). As someone of Eastern European descent\, I can tell you that these babies are as good as they get. \nSarme\nA classic dish across the Balkans\, cabbage rolls (Sarme) are stuffed with beef and smoked meat\, rice and spices wrapped in homemade pickled cabbage leaves.\n$4 \nFilovana Paprika\nRipe local peppers are stuffed with potatoes\, cream\, cheese and eggs\, and baked until tender.\n$4 \nMaslenica\nA gigantic traditional bread broken up at the table for sharing.\n$2 \nHomemade baklava \nas delicious as it sounds\n$3 \n(prices include HST)\n(vegetarian and gluten-free options) \nKsenija Hotic‘s involvement with food starts in Bosnia in her grandmother’s kitchen and her father’s foraging trips in the woods. It leads through Berlin and all the way up to the Toronto Underground Market\, where she is part of the team behind this innovative showcase for alternative culinary talent. An enthusiastic gardener\, foodie and photographer\, Ksenija is combining her love for cooking and her family’s heritage for this dinner of traditional Bosnian recipes.
