DESCRIPTION:Dan Dan noodles – the name is an onomatopoeia for the clacking of bamboo shoulder poles once worn by street vendors in Sichuan province. Leo lovingly recreates this robust\, intriguing dish in which fresh noodles are tossed in a soy\, sesame and home-made chili oil sauce\, topped generously with spicy ground beef and Sichuanese pickles and garnished with herbaceous Sichuan pepper and green onion. Home-style stir-fried Chinese greens and tea will be served with the dish. Tart\, refreshing smacked cucumber salad will be available. Vegan option available too! \nDan Dan noodles\, Chinese greens and tea – $12\nCucumber salad – $4 \nLeo Moncel is a professional cook who has honed his craft at The Stockyards Smokehouse and Larder for the last two years. In September\, he is beginning a 14 week position as a culinary extern at Terroni through George Brown College. Leo had the good fortune to visit Sichuan province in 2011\, culminating a long-standing interest in the area and its food culture.

DESCRIPTION:Spend an evening with one of Toronto’s culinary icons\, learn some fabulous new recipes and end with a lovely summer meal. \nThis intimate\, hands-on workshop will feature one of Greg’s most famous recipes\, Jump Up Soup\, probably as close as Toronto has ever come to having a signature dish (Loblaws even tried to package it). It’s his take on the spicy Jamaican flavours of pepper pot\, a traditional hearty soup of sweet & hot peppers\, Jamaican pumpkin\, veggies and curry seasoning. Keeping with the West Indian theme\, the menu will also include a baked Jerk Chicken with Coconut Rice\, and Mango & Jicama Coleslaw. \nIt would not be hyperbole to suggest that Greg Couillard is one of the most influential chefs in Toronto’s culinary history. SUMMARY:SUPPER CLUB: Craft Beer Tasting Menu - Summer Edition by Kendra Simmonds
DESCRIPTION:One of the highlights of our Spring 2013 lineup was Kendra Simmonds‘ amazing Craft Beer Tasting Menu. Developed in collaboration with Greg Clow of Canadian Beer News\, this meal featured half a dozen unique local brews incorporated into an elegant 5-course menu\, along with a tasting flight of matching beers. Special treats included exclusive tastings of two new beers not yet available for sale at the LCBO. The event was so successful that we are working to turn it into a quarterly celebration of local craft beer and ingredients. \nFor the Summer edition\, Kendra had put together a fun beer-infused menu full of creative dishes that showcase Ontario’s summer harvest. \n—–\nBeer Dough Pretzel Bites\nstuffed with beer sausage & beer-honey-mustard sauce\n– with Beer Academy Kolsch by Beer Academy \nSalad of Grilled Peaches Glazed with Beer\nFrisée\, pork-belly lardons\, beer vinaigrette\n– with Spearhead Hawaiian Pale Ale by Spearhead Brewing Company \nBeer Infused Mac and Cheese\nwith aged cheddar and beer bread crumb\n– with Black Oak Pale Ale by Black Oak Brewery \nBeer Braised Beef Short-Rib\nPolenta with grilled corn\, roasted cherry tomatoes & kale\n– with Cameron’s Obsidian by Cameron’s Brewing Company \n3 Layer Sorbet Trifle with Pretzel Crust\nWheat beer shandy\, raspberry wheat beer\, and orange wheat beer sorbets\n– with Kensington Watermelon Wheat by Kensington Brewing Company\n—– \nThe meal will be served with a tasting flight of all the beers used in the creation of the dishes – stay tuned for details as our we get local breweries on board. \n$50 +HST \nThis event is SOLD OUT\nPlease contact us if you would like to be put on a waiting list in the event of a last-minute cancellation.

DESCRIPTION:Robin “Squiggy” Dutt has been hosting fun\, creative events for a long time. Since getting his Chef papers from George Brown and taking up a residency on the line in the Drake Hotel kitchen\, these events now center around culinary explorations. For this seventh installment of Squiggfeast\, Robin has really gone out of his comfort zone and is doing a vegan menu. Squiggy is taking two philosophies into this dinner: vegan food that doesn’t feel like vegan food and vegan food that is not trying to be meat. \n—–\nAsparagus and Corn Veloute\nBright asparagus balances the subtle sweetness of a smooth chilled corn purée\, enlivened by a red pepper salsa. \nSmoked Tofu with Caramelized Onions\nTofu\, the ultimate absorber of flavour gets an umami boost from a delicate smoking\, paired with sautéed seasonal greens and a cider reduction. \nStrawberry and Thai Basil Gazpacho\nA vibrant amuse bouche to cleanse the palate between courses. \nChocolate Mousse with Seasonal Fruit\nEveryone loves chocolate\, and with the bounty of beautiful local fruit in season\, this dessert will be a surefire hit.\n—– \nRobin consistently delivers food beyond expectations\, with many delightful surprises to be had. He followed his love of food back to the Chef Training program at George Brown\, and after graduating\, ventured to Montreal to stage in various kitchens and gain experience in many culinary styles. Today\, we find him honing his craft back in Toronto\, in the kitchen of the Drake Hotel. DESCRIPTION:Everything-But-The-Kitchen-Sink Salad is an avocado lovers’\, kale-laced\, bourbon-spiked dinner in a bowl. Black kale tossed with wild sea asparagus\, summer peach\, avocado\, hot-smoked bourbon salmon\, caramelized onion and topped with sweet and spicy walnuts\, and bellavitano and pecorino romano cheeses. Paired with homemade lemon focaccia. \n$12\n(Vegetarian\, dairy-free version available\, too). \nAli Morrow is a journalist who loves to cook. Her curried kale and lentil soup and home-made focaccia have appeared at the Toronto Underground Market.
