DESCRIPTION:Thursday nights are usually our Student Chef Night\, but seeing as it is exam week\, we’ve decided to flip it around and welcome Aland Portillo\, one of the most experienced veteran chefs to grace the Depanneur’s humble kitchen. A Red Seal chef\, whose resume includes the Ritz Carlton Hotel and the Rosedale Golf and Country Club\, Aland was a seasoned restauranteur in his native Colombia\, from where this classic dish hails. \nSancocho (from the Spanish verb sancochar\, “to parboil”) is traditional dish found in one form or another throughout the Spanish-speaking world. Very popular in the costal regions of Colombia\, it falls somewhere between a soup and a stew\, featuring large chunks of vegetables (cassava\, green banana plantain\, potato\, cabagge & corn) cooked a hearty meat broth and finished with a slice of avocado\, cilantro and a creole sauce on top. For tonight’s dinner\, Aland will be making it with oxtail\, which produces an especially rich and satisfying dish.\n$12 \nA vegetarian version will also be available.\n (gluten free) \n

DESCRIPTION:Discover how quick an easy it can be to make your own fresh pasta at home at this fun and hands-on workshop. Participants will learn two basic dough recipes (one that will include eggs\, one that will not (vegan)) using local ingredients such as organic flour\, eggs\, vegetables and locally-made ricotta\, that are the basis of a wide variety of different types of pastas. If you happen to own your own a pasta machine\, you are encouraged to bring it along\, otherwise one will be provided. \nPastas that will be demonstrated and made by participants include: Tagliatelle\, Papardelle\, Farfalle (butterflies)\, Tagliarini\, Maltagliati\, Lasagne\, Chitarra (rolled on a “guitar”)\,Orecchiette\, Torfie\, Pici and Garganelli and Cavatelli (both rolled on a gnocchi board) as well as Ravioli. \nRobert will be covering;\n– The differences between pasta varieties\, their function in relation to what sauce suits them best\, and why.\n– Understanding the basic ratios for making fresh pasta.\n– Developing\, rolling and understanding the properties of a good dough.\n– Cutting\, shaping\, rolling and cooking fresh pasta.\n– Sauces such as Tomato\, Meat Sugo\, Seafood\, Carbonara\, Pesto and Butter Sauces\n– Canning your sauce to take home/store for the winter\n– Ravioli fillings such as spinach and ricotta as well as roasted squash\n– What cheese to pair with what sauce\n– Regional differences\n– Secrets from Italy and some advanced techniques for impressing friends and family. \nParticipants will learn about\, make and eat lots of fresh pasta\, and possibly take some home (if there’s any left!). This class involves making crepe batter and learning how to cook and flip crepes. Then the fun starts as we create fillings for the crepes. Crepes are an amazing way to “hide” healthy foods. Historically I’ve had 15 children eating spinach in my crepe class. \nWeek 2: Mexican Tortilla Mania\nMixing\, rolling\, and pressing tortillas right from the base ingredient of corn. This mexican staple is easy for kids to make and is a medium for a variety of different sides: cheese\, salsa\, guacamole\, and re-fried beans all made from scratch. \nWeek 3: Fabulous Fermentation\nWhat kid wants to ferment?! Traditionally it was children that held the amazing ability to stomp on\, play with and break down cabbage until it turned into sauerkraut! We will make a kraut and monitor it for changes in taste and texture. In the class we will discover the amazing addition sauerkraut can be to grilled cheese. \nWeek 4: Breakfast\nWe all know that Breakfast is the most important meal of the day. This class will focus on exploring nutritionally complete and delicious breakfasts. DESCRIPTION:For Ginger’s last Wednesday-night Drop-In Dinner at The Dep\, she’ll be visiting Spain for inspiration. Cocido is kind of like the Spanish version of the French cassoulet – a rich and comforting stew of meats\, chickpeas and potatoes (an all-veggie version is also available). It’ll be served with a side of tapas: pa amb tomaquet\, a Catalan-style bruscetta/tomato pizza; chorizo in rioja\, smoked sausage cooked with onions & red wine -or- classic Spanish tortilla\, made with eggs\, potatoes and olive oil; and a small side of green salad. \n$12 – Pay What You Can after 7:30\nFresh City Farms CSA Veggie Box Pick Up 5-8pm \nGinger Dean has been an amazing and integral part of The Dep since the beginning. Starting out as our brunch chef\, then later heading up our Wednesday night Drop-In Dinners\, her amazing food and generous spirit reflect everything that The Dep is about. Ginger will be moving to B.C. in April to help her step sister with an organic farming project on Salt Spring Island\, so this will be her last dinner at The Dep for the foreseeable future. \nAs much as we’re going to miss Ginger\, I am very excited to announce that Quinn Cruise (remember her amazing Japanese Hambaagu?) will be taking over the Wednesday night slot and the PWYC format\, so Ginger’s tradition of great\, affordable Wed.-night dinners will keep on going strong.

SUMMARY:DROP-IN DINNER: Deluxe Pad Thai by Len Senater
DESCRIPTION:The food I ate in Thailand remains as one of my all-time favourite life experiences. Perhaps because Toronto does not have a big Thai expat population to serve\, I find that most Thai food here is but a pale memory of the amazing flavours\, colours and textures of the real deal. Tonight I’ll do my best to re-create a bit of that Thai street food magic. \nPad Thai\, the iconic Thai noodle dish features stir-fried rice noodles in a tangy & sweet\, salty & spicy\, tamarind-spiked sauce with shrimp\, tofu\, scallions\, egg\, veggies\, basil\, coriander\, topped with crushed peanuts and lime. $12 \nI can easily make a vegetarian version (no shrimp and/or egg) – though it will have Thai fish sauce. I’ll try and make a batch of serviceable vegan sauce as well. $10 \n(Veg’n-friendly & gluten free)

SUMMARY:SUPPER CLUB: Korean Lunar New Year Temple Feast by Jonna Pederson
DESCRIPTION:Seollal – Korean Lunar New Year – is a holiday ripe with promise\, symbolism and delicious culinary tradition. As Springtime peeks round the corner\, Jonna will share her gleaned knowledge of Korean Buddhist temple cuisine in this ambitious and varied feast. \nFirst course: Temple Food Banchan Starter \nThe sort of stuff you’ll only find halfway up a mountain. Kick off your shoes\, sit on a pillow and enjoy dozens of tiny\, meticulously arranged dishes. Banchan is a sort of Korean tapas that includes acorn jelly\, peppery bitter greens\, rich soybean stew\, fortifying pumpkin porridge\, syrupy sweet potatoes\, and a handful of different spicy kimchis. Nibble and sample while you sip on steamy roasted barley tea. \nSecond course: Seollal – Happy Year of the Snake! \nThe first meal of the New Year for many Koreans is Ddeok Guk soup – a creamy\, peppery broth\, garnished with chewy coins of ricecake\, pan-fried julienned egg whites and yolks\, brisket (for our temple food purposes\, swapped out with plump rich seitan slices) and crispy seaweed. This colourful soup is said to furnish you with enough good fortune to last til next Seollal. We’ll also enjoy two types of savoury pan-fried mandu dumplings and strips of pajeon – spring onion rice cakes with sesame sauce. \nThird course: Tea Service \nKorean teas are many and varied. We’ll cap off our night with hot cinnamon tea\, icy shikkhye\, sweet ginger yuzu tea\, honey pastries and chewy pancakes filled with pockets of warm\, drippy spiced brown sugar called hoddeok. This street-food favourite will warm your hands on the journey home. \nJonna Pedersen spent 3 years in Korea teaching art and studying cooking. When she wasn’t learning at the apron-strings of her stoic ajumma (auntie) neighbours\, she was hiking up mountains to sample traditional Buddhist monastery cuisine. \n$40 +HST \nReserve Now by Credit Card or PayPal
