SUMMARY:SUPPERCLUB: Mid-Autumn Moon Festival Family Banquet by Lejen Chen
DESCRIPTION:The end of summer\, the harvest and the autumn equinox have been celebrated around the world for millennia. In China\, agricultural production was closely tied to the lunar calendar\, so the Moon figured prominently in many folk traditions and mythology. This became a central theme in Autumn festivals\, including offerings made to Chang’e\, known as the Moon Goddess of Immortality. \nLike Thanksgiving in the West\, the Chinese Mid-Autumn\, or Moon Festival focuses on family gatherings\, gratitude for the harvest\, and the promise of an abundant future. Not surprisingly\, a rich and varied culinary tradition has developed around the feasts and family meals celebrated at this time of year. These feature seasonal ingredients like peanuts\, green soybeans\, duck\, taro and garlic\, as well as round\, symbolic foods like pomelos and Moon Cakes that represent abundance\, completeness and unity. \nFor this family banquet\, Lejen Chen combines her interest in traditional rural Chinese foodways and local\, organic ingredients for a very special 10-course tasting menu. This feast will cover the wide gamut of cooking methods common in China\, from smoking\, braising\, and steaming to blanching\, stir-frying and drying\, and feature local\, organic produce from Vicky’s Veggies’ and Marvellous Edibles. \n—–\nSeaweed Roasted Peanuts\nBoiled Edamame\nBeijing-style Smashed Cucumber Salad\n Tea-Smoked Duck\nJudge Chew’s Vegan Tofu with crispy garlic and shallots
(George Chew is a judge in NYC who cooks amazing Chinese feasts — this is one of his trademark dishes that I love)\nBraised Pork Belly with Sea Cucumber
(Sea cucumber is a traditional banquet dish with high nutritional and medicinal properties)\nSteamed Pearl Meatballs (organic beef dipped in mochi rice)
\nSeasonal Asian Greens
\nSweet Corn Egg Drop Soup
(made with local non-GMO sweet corn)\nTaro Stir-fried Rice\nTaro Ice Cream Mooncakes (grass-fed\, local & organic Jersey cream)\nFresh Pomelo\nOrganic Oriental Beauty Tea\n—– \n$50 +HST \n—–\nA Chinese-American native of Brooklyn\, NY\, Lejen Chen returned to China to open Mrs. Shanen’s\, Beijing’s first bagel bakery! Dismayed by the difficulty of sourcing local organic produce and dairy\, she went on to found Green Cow Farms\, an organic farm and CSA that supplies her two popular Beijing cafés. She’s traveled extensively in China in search of heritage seeds\, breeds and traditional Chinese comfort foods\, which historically were mostly organic. \n—–\nEvery weekend The Depanneur invites a guest chef to host a fun\, informal dinner party.

SUMMARY:DROP-IN DINNER: Mu Xu Pork by Len Senater
DESCRIPTION:One of my favourite things about growing up and living in Toronto has been the incredible array of Asian food that I have been able to enjoy. My family has been regulars at numerous Chinese restaurants in Toronto’s downtown Chinatown since I was kid\, and those flavours have shaped my palate and understanding of Chinese cuisine as much as my travels in Asia. \nWith culinary historian Shirley Lum talking about some the history and food of Toronto’s Chinatowns\, I thought I would take the opportunity to recreate one of my favourite dishes as a child\, Mu Xu (aka Mu Shu) Pork. Its roots in the cuisine of Shandong in Northern China make it stand out on the more Cantonese-influenced menus typical of Canadian-Chinese food. Almost like a Chinese “taco”\, Mu Xu pork features a flavourful stir-fry of pork\, wood ear and shiitake mushrooms\, eggs and vegetables like napa cabbage\, day lily buds and bamboo shoots that are wrapped in a thin flour pancake dabbed with sweet hoisin sauce. Served with a Northern Chinese-style smashed cucumber & sesame salad.\n$12 +HST \n#vegan & GF options available \n7pm TABLE TALK: Shirley Lum \ntalks about the history of Chinatowns and Chinese food in Toronto. \n—–\nLen Senater is the founder and proprietor of The Depanneur\, who happily cooks for his friends and neighbours every Tuesday night.

SUMMARY:DROP-IN DINNER: Tapioca com Carne Seca (Brazilian Cassava Crepes) by Rosa Shoel
DESCRIPTION:Rosa Shoel has been bringing the flavours of North-Eastern Brazil to farmers markets and events across Toronto. She uses locally-milled goma (tapioca or cassava starch)\, an ingredient traditionally used by the natives of the Brazilian Amazon\, to make crispy\, delicious and gluten-free crepes stuffed with a variety of locally-sourced\, seasonal fillings. \nThe plate comes with 2 tapioca-flour crepes\, one filled with carne seca\, a Brazilian speciality of salt-cured & dried beef\, cooked with spices and toped with aged Friulano (similar to Brazilian-style “Minas” cheese)\, the other stuffed with roasted local cherry tomatoes dressed with balsamic vinegar and cheese. The crepes are served with cassava fries\, a spicy mayo and a mixed salad with passion fruit dressing.\n$12\n#GF #vegan option available \nMini cassava coconut cake with homemade groundcherry (physalis) ice cream\n$5 \n—–\nRosa Shoel has been living in Toronto for more than 10 years. Well-studied in permaculture\, she’s lived on organic farms\, which have spirited her journeys through Ontario\, Central America\, The United States\, and Cuba. Rosa considers herself a defender of healthy and sustainable nutrition and a conscious consumer. \nRosa contacted a community deep inside the Chapada Diamantina\, a breathtaking national park in Bahia\, to reconnect to her cultural roots and learn more about the cultivation\, traditions and culinary aspects of the manioc/cassava. For three months\, she rode around the Chapada Diamantina with the project of a short documentary Finding our Roots  http://dozero.net/blog/ . \nNow she is leaving to Europe to work with DOZERO.net project looking for more traditions and culinary techniques \n—–\nEvery Friday The Depanneur is an ‘open mic’ night for culinary talent in TO\, where we invite guest cooks\, amateur or professional\, to come and make their favourite dishes.
