DESCRIPTION:Kombucha has been hailed as an ‘elixir of life‘. This tea-based\, naturally fermented beverage is the product of a symbiotic culture of bacteria and yeast (aka SCOBY). DESCRIPTION:Paella is the quintessential Spanish food of celebrations. Originating in Valencia\, but with countless regional variations\, this classic rice dish has five key ingredients: Spanish short-grain “Bomba” rice\, saffron\, pimentón (Spanish paprika)\, olive oil and the purpose-built paella pan from which the dish gets it’s name. José Arato\, owner and Head Chef of Pimentón\, has built and elegant Spanish meal around this signature dish. \nThe starter is a grilled vegetable salad called Escalivada. The name of this dish comes from the Catalan word escalivar\, meaning “to roast over ashes or embers\,” as it is traditional to cook the peppers\, eggplant\, zucchini\, etc. over a flame. The dish is then dressed with lots of garlic\, parsley\, lemon & olive oil. \nThe centerpiece of the meal will be the robust Chorizo & Chicken paellas. This non-traditional twist on paella features fresh chicken\, high quality\, locally-made Spanish chorizo & mixed vegetables over special short-grain Spanish Bomba rice cooked in a saffron-scented chicken stock. \nCrema Catalana is a Spanish dessert similar to creme brûlée\, but cooked on the stove instead of the oven. DESCRIPTION:January Pop Up Showcase: Cookin’ It Like A Boz with Ksenija Hotic \nThe Dep is delighted to welcome back Ksenija\, the Hotic family and their fabulous Bosinan specialities. Dinner is your choice of Sarme (Cabbage Rolls) and/or Filovana Paprika (Stuffed Peppers) served with Maslenica (Homemade bread). As someone of Eastern European descent\, I can tell you that these babies are as good as they get. \nSmoked Meat Plate\nThin slices of home-smoked beef (Pasturma) and cured lamb sausage (Sujuk)\n$5 \nSarme\nA classic dish across the Balkans\, cabbage rolls (Sarme) are stuffed with beef and smoked meat\, rice and spices wrapped in homemade pickled cabbage leaves. (3)\n$12 \nFilovana Paprika\nPeppers stuffed with potatoes\, cream\, cheese and eggs\, and baked until tender. (2)\n$12 \nCombo Plate – 2 Sarme & 1 Filovana Paprika\n$14 \nAll of the above are served with homemade Maslenica\, a gigantic traditional bread made for sharing. \nHomemade baklava – as delicious as it sounds\n$3 \n—–\nKsenija Hotic’s involvement with food starts in Bosnia in her grandmother’s kitchen and her father’s foraging trips in the woods. It leads through Berlin and all the way up to the Toronto Underground Market\, where she is part of the team behind this innovative showcase for alternative culinary talent. DESCRIPTION:$1 from each dinner will go to the Red Cross Typhoon Haiyan Relief Fund. \nChef Maybel Moore has been working in kitchens since the age of sixteen\, starting out as a prep cook in her hometown of London\, Ontario. After graduating from George Brown College Chef School\, Maybel spent eleven years as sous chef at West Queen West’s bar_one\, the recently closed and much loved Southern Italian restaurant. These days Maybel can be found raising her family and turning out killer brunch fare at The Three Speed in Bloordale. After 20 years in the food business\, Maybel is known as a trusted chef and passionate baker\, who is now ready to turn her keen abilities to the nom-noms of her childhood. \nTonight’s menu represents Maybel’s Filipino heritage\, her favourite comfort foods\, and her deep love for upside down cake. Together with her partner Erika Schweizenheimer\, Lumpia Girls presents: \nDINNER:\nChicken Adobo – Considered by many Filipinos to be the Philippines’ national dish\, adobo is meat or sometimes seafood simply braised in vinegar\, soy sauce\, onions\, garlic and bay leaf. There are many variations\, this is the way Maybel’s mom taught her\, served with steamed bok choy and jasmine scented rice.\n-or-\nVegetable Lumpia Plate – Two vegetable lumpia with stir fried bok choy and jasmine scented rice.
